Service and Cellaring

The Bonnes-Mares Grand Cru 2022 is best enjoyed at a temperature of 16–18°C. Decanting for one hour allows it to reveal its full aromatic complexity. This wine will reach its peak around 2034–2036.

A White Burgundy Grand Cru from an Exceptional Terroir

The Estate

Founded in 1956 by Charles Mortet in Gevrey-Chambertin, and under the direction of his son Denis since 1993, the Burgundian estate Denis Mortet now spans 16 hectares across Gevrey-Chambertin, Chambolle-Musigny, Vougeot, Marsannay and Fixin. Since 2006, it has been led by Arnaud Mortet alongside his mother Laurence and sister Clémence, and includes prestigious parcels such as the Grands Crus Chambertin, Bonnes-Mares and Mazis-Chambertin.

The Vineyard

The Bonnes-Mares comes from a parcel located in the center of the Chambolle-Musigny hillside, on the famous "terres blanches". These rocky, highly limestone-rich soils rest on pure clay, giving the wine its distinctive minerality. The vines, averaging 70 years old, cover 35 ares and are farmed according to organic agriculture principles, with horse-drawn plowing and exclusively organic amendments.

Vinification and Aging

Manual harvesting into small crates allows for rigorous grape sorting. The vinification of the Bonnes-Mares Grand Cru 2022 is carried out with partial destemming and the exclusive use of indigenous yeasts. Pump-overs and pigeages are performed with moderation. The aging takes place over 18 months in oak barrels, with 80% new barrels and 20% one-wine barrels.
