    Tasting

    Colour
    The colour reveals a magnificent garnet hue with subtle violet highlights.

    Nose
    Both vibrant and delicate, the aromatic bouquet expresses a lovely freshness. It reveals aromas of red and black berries, such as blackberry, blackcurrant and black cherry, harmoniously blended with subtle notes of undergrowth.

    Palate
    The palate seduces with its silky, enveloping texture, offering a perfect balance between power and finesse. The tannins, remarkably delicate, are beautifully integrated. The finish, of remarkable length, stands out for its persistent freshness, mineral tension and an elegant saline touch.

    Food and Wine Pairing

    This great red wine pairs wonderfully with dark-fleshed poultry such as duck or goose, as well as game such as pheasant or venison. It will also enhance flavourful red meats, a truffle risotto, or cow's milk cheeses such as Époisses.

    Service and Storage

    For optimal enjoyment of this Echezeaux Grand Cru 2023, it is recommended to serve it at a temperature of between 13 and 15°C, in a wide-bowled glass. It is advisable to open the bottle several hours before serving. With exceptional aging potential, this wine can be cellared for around 15 to 20 years.

    The Elegance and Complexity of a Great Burgundy Wine

    The Estate

    Located in the heart of the Burgundy wine region, the renowned Domaine des Perdrix truly flourished after its acquisition in 1996 by the Devillard family, whose winemaking expertise spans five generations. Today, Amaury and Aurore Devillard passionately run this fifteen-hectare estate, more than half of which is classified as Premier and Grand Cru. Recognised for its meticulous parcel-by-parcel approach and its respect for the environment, the estate has established itself as an unmissable reference in the Côte de Nuits, offering wines of great fidelity to their terroir.

    The Vineyard

    The cuvée comes from a highly privileged 0.85-hectare plot located at the heart of the "Echezeaux du Dessus" climat. Facing south and southeast, the vines, planted in 1922, flourish on clay-limestone soils from the Middle Jurassic, dominated by brown clay scattered with small pebbles. The vineyard is managed according to sustainable viticulture principles, without synthetic chemical products, using Guyot pruning and a rigorous green harvesting practice to control yields.

    The Vintage

    The year 2023 began with a mild, dry winter, favouring early budbreak. Spring brought welcome rainfall in March, followed by uniform flowering in May. While early summer was marked by a few stormy episodes, the end of the season proved particularly favourable, with a heatwave in September. These conditions made it possible to harvest grapes at optimal ripeness, starting on 16 September during the cool morning hours.

    Winemaking and Aging

    The grapes intended for this Echezeaux Grand Cru 2023 are hand-harvested and carefully sorted. A four-to-six-day cold pre-fermentation maceration is carried out, with 30% whole clusters. Alcoholic fermentation then begins with indigenous yeasts during a vatting period of around fifteen days, punctuated by punching-down. After malolactic fermentation, the wine is aged for eighteen months in French oak barrels, 85% of which are new.
