Palate
Full-bodied and endowed with silky, perfectly integrated tannins, the palate offers pleasing freshness. The finish, of notable length, stands out with menthol and liquorice notes and a delicate saline touch.
Food and wine pairing
Ideal with a porcini mushroom risotto, this wine also pairs beautifully with braised lamb, full-flavoured meats or a truffled brie. Over time, it will accompany dishes based on feathered game.

The Expression of a Great Burgundy Terroir by Domaine des Perdrix
The estate
Taken over in 1996 by the Devillard family, Domaine des Perdrix has established itself as a benchmark in Burgundy, France. Located in Prémeaux-Prissey, the estate spans fifteen hectares across various terroirs of the Côte de Nuits. Now managed by Amaury Devillard, the estate follows an environmentally conscious philosophy, certified by the organic farming label. Through a low-intervention approach, the estate produces wines renowned for their ability to faithfully express the nuances of their terroirs.
The vineyard
This wine comes from the "Du Dessus" climat, located at the heart of the Echezeaux appellation. The 0.85-hectare plot lies on a mid-slope, benefiting from optimal sun exposure while being protected from the cool influences of the Combe d'Orveaux. The vines, around thirty-five years old, grow in shallow soils composed of Jurassic marl and clay. The estate favours controlled yields and hand-harvesting to ensure the quality of the grapes.
The vintage
The year 2022 stood out for its warm summer, which favoured optimal ripening of the grapes. Weather conditions allowed the soils to retain sufficient moisture, thereby preventing excessive water stress on the vines and yielding fruit of beautiful concentration.
Winemaking and aging
After a rigorous manual sorting, the grapes destined for this Echezeaux Grand Cru "Du Dessus" 2022 are 70% destemmed, with 30% left as whole clusters. A four- to six-day cold pre-fermentation maceration precedes a fermentation period of around fifteen days punctuated by punching down, driven by indigenous yeasts. The wine is then aged for fifteen months in French oak barrels (50% new), before finishing with a four-month rest in stainless steel tanks.
