    Tasting Notes

    Appearance
    The colour reveals a pale yellow hue enhanced by delicate green highlights.

    Nose
    Elegant and floral, the bouquet exudes aromas of ripe yellow fruit, citrus and white flowers such as acacia. This is underscored by a stony mineral thread and subtle oak notes.

    Palate
    Generous yet remarkably clear, the palate seduces with its vivacity and freshness. Carried by chalky tension and citrus notes, this refined and structured cuvée lingers on a persistent finish.

    Food and Wine Pairing

    This white wine pairs wonderfully with grilled fish such as salmon, shellfish like lobster or scallops, and creamy white poultry dishes. It also goes beautifully with a mushroom risotto or pressed cooked cheeses such as Comté.

    The Elegance and Mineral Tension of a Great White Wine from Santenay

    The Estate

    Although the site's Cistercian origins date back to the 12th century, Domaine du Cellier aux Moines, in its current form, was created in 2004 by Catherine and Philippe Pascal. Located in Givry, in Burgundy, this family-owned estate spans around twelve hectares spread across the Côte Chalonnaise, the Côte de Beaune and Beaujolais. Driven by a deep commitment to respecting living ecosystems, the estate is certified organic and biodynamic. Equipped with an innovative gravity-flow winery, it stands out for its rigorous plot-by-plot approach, resulting in wines of remarkable purity.

    The Vineyard

    This cuvée comes from a 26-are micro-plot planted in 1993. Situated on high ground above the village of Santenay, this climat benefits from a southeast exposure and an altitude ranging between 252 and 265 metres. The vines thrive on a very thin layer of clay-limestone soil resting directly on a fractured bed of hard oolitic limestone. This distinctive terroir, cultivated according to biodynamic principles, gives the grapes a particularly pronounced mineral character.

    The Vintage

    The 2024 vintage in Burgundy faced extreme weather conditions. A lack of sunshine combined with excessive rainfall encouraged strong mildew pressure, while episodes of frost and hail severely affected yields. However, a particularly mild and sunny September allowed the berries to reach satisfying ripeness. A late harvest, combined with extremely rigorous manual sorting, ultimately produced concentrated and promising juices.

    Winemaking and Ageing

    The winemaking of the Santenay 1er Cru "Beauregard" 2024 follows a low-intervention approach thanks to a gravity-flow winery. After hand-harvesting, the berries undergo a very gentle pressing. Alcoholic fermentation begins naturally through the action of indigenous yeasts. The wine is then aged for an extended period in oak barrels for at least two winters, before spending an additional year resting in bottle prior to release.
