Description
Characteristics and Tasting Tips for the Corton Grand Cru "Les Maréchaudes" 2025 from Domaine du Château de Meursault
Food and wine pairing
This grand cru from the hill of Corton pairs beautifully with refined red meats, such as a tournedos Rossini, or with game dishes such as hare terrine, whose richness matches the wine's tannic structure.

The estate
The Domaine du Château de Meursault took on its modern form in 1973, when André Boisseaux restored the property and expanded its vineyard. Since December 2012, the estate has belonged to the Halley family, under the leadership of Olivier Halley. Located in Meursault, in Burgundy, it now extends over 67 hectares, all of which are farmed organically. Spread across several appellations of the Côte de Beaune, the estate combines a sizeable vineyard with a commitment to quality, asserting an identity focused on viticulture that respects Burgundy's terroirs.
The vineyard
The Corton Grand Cru "Les Maréchaudes" comes from a climat on the hill of Corton, one of the few climats of this grand cru appellation traditionally associated with Pinot Noir for its red wines. The clay-limestone soils that characterise this slope give the wine its structure and ageing potential. Like the entire vineyard of Domaine du Château de Meursault, this plot is farmed organically.
Vinification and ageing
The Corton Grand Cru "Les Maréchaudes" 2025 is currently ageing. The fully destemmed grapes are placed in vat for a cold pre-fermentation maceration, followed by a gentle alcoholic fermentation, favouring pumping over rather than punching down in order to preserve the finesse of the tannins. The wine is then aged in oak barrels, for a typical period of 12 to 18 months suited to this grand cru from the hill of Corton, with a proportion of new oak.
Grape variety
100% Pinot Noir.
