Food and wine pairing
The style of the white Corton Grand Cru “Vergennes” lends itself to indulgent pairings in which richness and minerality complement one another. Lean fish served with a butter sauce are an ideal match, as are oysters prepared in a sabayon, whose creamy texture and hint of lemon echo the wine's tension. More broadly, this wine pairs beautifully with oily fish or shellfish in sauce, as well as with a characterful soft-rind cheese such as Mont d'Or.
Serving and cellaring
The Corton Grand Cru “Vergennes” 2025 is currently still ageing, as bottling has not yet taken place. According to the information provided by the estate, this white cuvée has, in keeping with its usual style, an ageing potential of 12 to 15 years, allowing it to reveal over time the full complexity of its terroir.

The estate
In its modern form, Domaine du Château de Meursault was founded in 1973 by André Boisseaux. Located in the heart of the Côte de Beaune, in Burgundy, it now extends over 67 hectares farmed organically, spread across six grands crus, twenty premiers crus and several village appellations. Since December 2012, the estate has belonged to the Halley family, under the leadership of Olivier Halley, who has continued to enhance this viticultural and architectural heritage while steering it towards more sustainable winegrowing.
The vineyard
The white Corton Grand Cru “Vergennes” comes from an 18.20-are plot farmed by the estate mid-slope on the hill of Corton. The plot enjoys an east to south-east exposure, making it an early-ripening site, on a very light and extremely stony soil made up of Jurassic limestone scree. The Chardonnay vines, around 12 to 15 years old, are farmed organically, like the rest of the estate's vineyard.
Winemaking and ageing
For the Corton Grand Cru “Vergennes” 2025, the Chardonnay grapes are hand-harvested, then pressed and settled before alcoholic fermentation in barrel. Ageing continues on the lees for 18 months in oak barrels, 35% of which are new, with bâtonnage carried out every two weeks during the first six months to bring texture and complexity. This vintage is still ageing at present, as bottling has not yet taken place.
