Meursault Premier Cru "Perrières" pairs particularly well with shellfish, whether simply cooked or served with a refined sauce: langoustines, lobster and scallops find an excellent partner in this wine. It can also elevate noble fish delicately prepared, for a gastronomic pairing in the purest Burgundian tradition.
Serving and Cellaring
Meursault Premier Cru "Perrières" 2025 is ideally served between 12 and 14°C, a temperature that reveals its complexity while preserving its freshness. This vintage, still available en primeur and ageing in barrel, will benefit from brief decanting when served, to help its aromas open up.

The Estate
The history of Domaine du Château de Meursault dates back to the 11th century, but it was in 1973 that the estate took its current form, when André Boisseaux fully restored it to make it one of the greatest estates in Burgundy. Since December 2012, it has belonged to the Halley family, who have committed the estate to a thorough agroecological approach, with organic certification of the entire vineyard since the 2022 vintage. Based in Meursault, in the Côte de Beaune, the estate extends over 67 hectares spread across numerous great terroirs, including the famous Clos du Château, an 8-hectare monopole.
The Vineyard
Meursault Premier Cru "Perrières" comes from the climat known as "Les Perrières-Dessus", located mid-slope on a steep gradient of around 45°, with an east/south-east exposure particularly favourable to the ripening of Chardonnay. The soil, made up of hard Jurassic limestone, gives this terroir a strong mineral identity. The estate farms an area of approximately 1.12 hectares there, spread across two plots planted in 1995 and 2000. Like the entire Château de Meursault vineyard, this plot has been farmed organically since the 2022 vintage, with Poussard pruning and soil work that respects biodiversity.
The Vintage
The 2025 vintage is currently offered en primeur, while the wine continues to age in oak barrels at the estate. It follows the stylistic continuity of previous vintages of Meursault Premier Cru "Perrières".
Winemaking and Ageing
For Meursault Premier Cru "Perrières" 2025, the hand-harvested grapes are sorted and then pressed, and the must is statically settled before being transferred to oak barrels for alcoholic fermentation. The two plots of the climat, planted in 1995 and 2000, are vinified separately to preserve their respective characteristics before the final blending of the best barrels. Ageing continues on fine lees for 15 to 19 months, with approximately 35% new oak barrels, the remainder being aged in one- to two-year-old barrels.
