    Tasting

    Colour
    The colour reveals a delicate pale ruby hue, reflecting a measured and finely balanced extraction.

    Nose
    The aromatic bouquet opens with red fruit aromas such as cherry, raspberry and plum. It is enriched by spicy notes reminiscent of Sichuan pepper, Espelette pepper, cinnamon and nutmeg, rounded out by balsamic, eucalyptus and fine herb touches.

    Palate
    The palate offers a fine texture and an elegant structure supported by delicate tannins. Intense flavours of blackberry, blackcurrant and red fruits intertwine with rich peppery notes, leading to a fresh and lingering finish.

    Food and wine pairing
    This French red wine pairs wonderfully with white or grilled meats, roast lamb, poultry, as well as roasted offal such as veal sweetbreads or liver. It also pairs very well with charcuterie, grilled andouillette sausages and medium-ripened soft cheeses.

    Service and storage
    To fully enjoy the Monthélie Village "Les Toisières" 2023, it is recommended to serve it at a temperature between 14 and 16°C. This wine can be enjoyed young but will continue to evolve favourably until around 2033.

    The Elegance and Purity of a Great Burgundy Wine from Domaine François Mikulski

    The estate
    Founded in 1992 by François and Marie-Pierre Mikulski, Domaine François Mikulski has established itself as an essential reference in Burgundy. Based in Meursault, the estate tends to a vineyard of approximately 8 to 9.5 hectares spread across prestigious appellations. Today, the domaine is co-run by François Mikulski and his son-in-law Thomas Boccon, with the involvement of the new generation represented by Anna. A firm advocate of sustainable viticulture through integrated pest management, the domaine stands out for its constant pursuit of authenticity, elegance and purity, limiting intervention to allow each terroir to express itself fully.

    The vineyard
    The "Les Toisières" plot is located at the entrance to the village of Monthélie, on a south-west-facing slope offering optimal sun exposure. This unique terroir, a former quarry from which flat stones were extracted for roofing, sits on clay-limestone soils with a Bathonian limestone subsoil. The vines, planted around forty years ago, benefit from these unique geological conditions, which give the grapes remarkable concentration.

    The vintage
    2023 began with a mild winter followed by a splendid spring flowering. The summer season proved more contrasting, alternating between heat waves, cooler spells, dry periods and stormy rains. These variable weather conditions required constant attention but resulted in a healthy, abundant and high-quality harvest, with early picking beginning at the end of August.

    Winemaking and aging
    For the Monthélie Village "Les Toisières" 2023 cuvée, the grapes are destemmed before undergoing a roughly fifteen-day fermentation in vat using indigenous yeasts, accompanied by punching down of the cap. The wine is then transferred to barrel for an aging period of at least 18 months in French oak barrels, 20% of which are new, during which malolactic fermentation takes place. Finally, the wine rests in vat for three to four months before bottling.
