Appearance
A beautiful garnet red colour reveals itself in the glass.
Nose
The nose displays great aromatic complexity, opening on notes of ripe black fruits, strawberry and raspberry. It then evolves towards hints of liquorice, garrigue herbs, tapenade and chocolate, subtly underlined by nuances of undergrowth and a touch of oak.
Palate
On the palate, this wine offers a perfect balance between power and silkiness. The texture relies on fine, grainy tannins, accompanied by moderate acidity. The long and flavourful finish prolongs the experience on delicate fruity and spicy notes.
Food and wine pairings
This wine pairs wonderfully with characterful meats such as roast duck, young wild boar stew or beef cuts like a rib of beef or tournedos. It will also enhance slow-cooked dishes with Mediterranean herbs, fine charcuterie or a platter of mature cheeses, such as a Saint-Nectaire.

The Elegance and Depth of a Red Wine from Minervois
The estate
Founded in 1996 with the production of its first vintage, Domaine Jean-Baptiste Senat is located in Trausse, in the heart of Languedoc. Today run by Jean-Baptiste and Charlotte Senat, this 15-hectare estate has established itself as a true pioneer of natural viticulture in the region. Driven by an artisanal philosophy, the estate favours organic growing methods and a low-intervention vinification. Domaine Jean-Baptiste Senat thus strives to produce digestible and elegant wines, authentically reflecting the richness of their terroir.
The vineyard
Located within the Minervois appellation, the vineyard extends across the foothills of the Montagne Noire. The vines, trained in gobelet to protect them from the summer heat, thrive on a mosaic of soils made up of clay-limestone and siliceous garrigue lenses. Yields are strictly limited to 30 hectolitres per hectare, and the harvest is carried out exclusively by hand to ensure rigorous selection of the berries. This exceptional terroir is home to very old vines, including century-old Carignan stocks and 60-year-old Grenache vines.
Winemaking and ageing
The vinification of the Bois des Merveilles 2023 is carried out with whole bunches, thus preserving the integrity and freshness of the clusters. Fermentation, conducted exclusively with indigenous yeasts, lasts around fifteen days. The wine then benefits from extended ageing of 20 months in oak barrels, allowing it to develop its full complexity before being bottled at the estate.
