The property

An essential reference in Chablis, in Burgundy, the Domaine Laroche is particularly notable for its unique historical heritage dating back to the 9th century. Part of the Advini group since 2009, Domaine Laroche is recognized for the precision, elegance, and aromatic richness of its wines, which authentically express the subtlety of the Chablis climates.

The vineyard

The clay-limestone marls and the Kimmeridgian limestone are very present. This is a limestone rock rich in marine fossils, notably small oysters called Exogyra virgula. This composition offers a characteristic minerality to these Burgundy wines, with remarkable complexity and finesse. Moreover, this terroir benefits from a sunnier exposure, located in a more open valley, with soils having a greater capacity to retain heat.

Vinification and aging

Harvested by hand, the grapes are rigorously sorted at the entrance to the winery before low-pressure pressing, with separation of the juices and selection of the press hearts only. Gentle extraction. Alcoholic and malolactic fermentations in French oak barrels (90%) aged 1 to 7 years and in stainless steel tanks on fine lees. This Chablis 1er Cru wine has been aged on fine lees in stainless steel tanks and French oak for 12 months.
