Tasting notes
Colour
The colour reveals a pale, bright yellow hue, with green or silvery highlights in its youth.
Nose
Delicate and remarkably pure, the nose exudes aromas of white-fleshed fruits (peach, pear, green apple) and lemon zest, dusted with notes of white flowers. The whole is underscored by a mineral thread evoking chalk and wet stone.
Palate
The palate seduces with its tension and concentration. With a slightly creamy texture, it unfolds a fresh acidity carrying flavours of white and yellow fruits, such as apricot and nectarine. The long, energetic finish stretches out on superb saline, citrus notes with subtle spicy touches.
Food and wine pairing
This grand cru pairs wonderfully with fine fish (turbot, sole, sea bass) served with a light butter or cream sauce, as well as with roasted shellfish such as lobster or scallops. It also pairs beautifully with white meats in sauce, such as poultry with morels or sweetbreads, as well as with hard cheeses like a young Comté.
Serving and cellaring
For optimal tasting, it is recommended to serve this wine between 11 and 13°C in a tulip-shaped glass. A brief decanting can be beneficial in its youth. This Chablis Grand Cru "Les Bouguerots" 2023 can be enjoyed now, but has the structure needed to age in the cellar until around 2029.

The estate
Founded in 1850 by Jean-Victor Laroche, Domaine Laroche is a landmark name in Burgundy. While its historical roots go back to the 9th century at the heart of the famous Obédiencerie, the modern estate today oversees a vast 90-hectare vineyard. Owned by the AdVini group since 2009 and led by Jean-Baptiste Mouton, the house stands out for its pioneering approach to agroecology and its demanding environmental certification. Combining a thousand-year-old heritage with precision viticulture, the estate produces wines that express the full richness and diversity of the Chablis terroirs.
The vineyard
This Chablis wine comes from a tiny 31-are plot located on the Les Bouguerots climat, the westernmost of the grand cru hillside. Facing south and south-west, the vines flourish on a steep slope overlooking the Serein river. The terroir consists of soil rich in limestone, complemented by a thin layer of clay at the bottom of the slope that ensures excellent water retention. The vineyard is farmed according to strict agroecological principles, without herbicides, with massale selection and a strong commitment to preserving biodiversity.
Winemaking and ageing
The grapes are hand-harvested to carefully sort the berries. Pressing is carried out gently, using whole clusters, to preserve the purity of the juice. After natural settling for around twelve hours, the fermentation and ageing of this Chablis Grand Cru "Les Bouguerots" 2023 take place in oak barrels aged one to seven years for about nine months. The final blend is then refined through a further six months of ageing on fine lees.
