Tasting
Color
The color reveals a brilliant golden yellow hue.
Nose
The nose opens with great mineral freshness and iodized touches reminiscent of the ocean. It then reveals a complex bouquet blending citrus aromas such as lime and clementine, fruits such as kiwi and pear, along with delicate floral and herbaceous notes of jasmine, verbena, and fennel. Subtle spicy and smoky notes round out this ensemble.
Palate
On the palate, this white wine from France stands out for its immense precision and great finesse. Carried by a lovely salinity and a stony minerality, the palate offers a refreshing and energetic sensation. The acidity is perfectly balanced, leading to a vibrant, mouth-watering finish with remarkable length.
Food and wine pairing
This cuvée pairs wonderfully with seafood, such as oysters, shrimp, or steamed white fish. It also pairs very well with shellfish like lobster served with a light butter sauce, or spring dishes featuring asparagus and mixed salads.

The estate
Founded in 2001 by Marjorie Gallet, Domaine Le Roc Des Anges is a leading reference in Roussillon. Initially cultivated on around ten hectares, the estate now spans approximately 40 hectares of biodynamically farmed vines. Renowned for its respectful approach to terroir and minimal-intervention winemaking, the estate produces wines of remarkable mineral purity. At the end of 2023, a new chapter began with the transfer of a significant share of the estate to Thibault Ponthier, the current owner, who is committed to upholding the excellence and philosophy of this exceptional estate.
The vineyard
Located in the far west of the region, near the Pyrenees mountain range in the commune of Tarerach, the plot sits at an altitude of 500 meters. Unlike the traditional schist soils of the region, this terroir, classified as IGP Côtes Catalanes, rests on a unique granite geological formation. The vines, planted in 1961, benefit from deep rooting that brings exceptional concentration and minerality to the grapes.
Winemaking and aging
For the "Imalaya" 2023 cuvée, whole bunches are pressed directly without prior cooling, followed by natural decantation. Fermentation is triggered by indigenous yeasts in barrels and vats of various sizes. The wine is then aged for about fifteen months in large vats to develop its full complexity. Before bottling, the wine undergoes only light filtration, with no fining, in the purest respect for the fruit.
