    The bouquet expresses lovely intensity with rich, very ripe fruit aromas, offering remarkable concentration without any sense of overripeness.

    The palate proves dense and fleshy, supported by tight yet highly refined tannins, free of any astringency. The whole displays fine depth and extends into a finish marked by an elegant chalky touch. The wine gains in refinement and harmony as it opens up with aeration.

    Food and Wine Pairing

    This red wine pairs beautifully with characterful meats such as game (venison, wild boar, pheasant) or a traditional beef bourguignon. It will also surprise with its harmony alongside spiced dishes such as a tagine or couscous, as well as with washed-rind cheeses like Époisses.

    The Elegance and Depth of a Pommard Terroir

    The Estate

    Founded in 1997 by Nicolas Rossignol, who represents the fifth generation of a family of winegrowers, the Domaine Nicolas Rossignol is a benchmark in Burgundy. Located in Beaune, the estate now spans around 17 hectares across the prestigious Côte de Beaune. The current owner, drawing on his international experience, cultivates the vines according to sustainable farming principles, drawing strong inspiration from biodynamics. The estate stands out for its meticulous, parcel-by-parcel approach and its determination to let each terroir express its own identity with the utmost purity.

    The Vineyard

    This cru comes from the famous village of Pommard, more precisely from the Petits Épenots sector, located at the foot of the slope towards Beaune. The terroir is composed of shallow clay-limestone soils, tinted red and rich in stones, offering excellent drainage. The plot is home to a diverse mix of vines, combining stock around 45 years old with very old vines aged between 70 and 110 years. The vineyard is maintained without any chemical herbicides, with exclusively manual harvesting carried out using small crates.

    The Vintage

    The year 2022 stands out as one of the hottest, driest and sunniest on record in over a century. Following a cool winter and a spring marked by a slight risk of frost, temperatures rose rapidly in May, favouring optimal flowering. At the end of June, particularly abundant and welcome rainfall replenished the soil's water reserves, sparing the vines from water stress during the very hot and dry months of July and August. Harvesting took place under excellent weather conditions.

    Winemaking and Ageing

    For this Pommard 1er Cru "Épenots" 2022, the winemaking process includes 60% whole clusters, fermented using indigenous yeasts. After a maceration period punctuated by measured pumping-over and punching-down, the wine is transferred by gravity. Malolactic fermentation is deliberately delayed until the following spring to enhance aromatic complexity. Ageing takes place on fine lees, without any racking, for 10 to 20 months in oak barrels, of which 20 to 25% are new. The wine is finally bottled without fining or filtration, in accordance with the lunar calendar.
