    Tasting

    Colour
    The wine displays a pale yellow hue with bright, subtly golden highlights.

    Nose
    Remarkably pure, the nose reveals great aromatic complexity, blending notes of white and yellow fruit such as peach and apricot with hints of citrus and white flowers. The whole is enhanced by delicate nuances of sweet spices and a smoky minerality.

    Palate
    Full and generous, the palate is captivating with its silky texture and precision. It strikes a remarkable balance between fruity richness and vibrant mineral tension, stretching into a long, savoury and slightly saline finish.

    Food and wine pairings

    This great gastronomic white wine pairs beautifully with spiced veal sweetbreads, white meats in sauce or a traditional choucroute garnie. It is also a perfect match for pressed or washed-rind cheeses, as well as vegetarian dishes such as mushroom risotto or roasted root vegetables.

    Serving and cellaring

    For optimal enjoyment, serve this wine at a temperature of between 10 and 11°C. Light decanting in its youth will allow it to reveal its full complexity. This wine can be enjoyed now but will continue to develop gracefully until around 2038.

    The estate

    Founded in 1966 by Irma and Adolphe, Domaine Ostertag is an essential benchmark in France. Located in Epfig, this family estate of around fifteen hectares rose to prominence under André's leadership thanks to its innovative approach and early commitment to biodynamics, with certification since 1998. Today, Arthur Ostertag heads the estate and carries on this philosophy of respect for living ecosystems. Combining artistic sensitivity with precision viticulture, the estate tends its plots like true gardens, producing Alsace wines of great purity that enjoy international acclaim.

    The vineyard

    This cuvée comes from a tiny plot of 0.4 to 0.5 hectares, identified by its cadastral reference A360P. This micro-terroir lies at the north-eastern tip of the Grand Cru Muenchberg, a south-facing natural amphitheatre in the Alsace wine region. The vines, which are 50 to 60 years old on average, thrive on complex soils of pink sandstone, volcanic rock and limestone veins. Farmed biodynamically, the vineyard is harvested by hand, with deliberately very low yields to ensure optimal concentration in the berries.

    Vinification and ageing

    Vinification draws inspiration from Burgundian methods. After whole-bunch pressing, fermentation begins naturally with indigenous yeasts. The wine is then aged for twelve months on fine lees in small 228-litre oak barrels, around 20% of which are new. This method enhances the wine's aromatic complexity and silky texture while preserving the brightness of the fruit.
