Description
Characteristics and tasting notes of the Bibi 2024 Domaine Partagé - Gilles Berlioz
Tasting
Colour
Red in colour, the wine reveals a burlat hue with milky purple highlights. It presents a rather pale appearance, characteristic of its blend.
Nose
The bouquet reveals a lovely aromatic complexity dominated by notes of fresh and candied cherries, along with red berries. These are joined by touches of black pepper, violet, honeysuckle and lime blossom, complemented by mineral nuances of flint, camphorated liquorice and a subtle smoky hint.
Palate
The attack offers a remarkable balance between lightness and vitality. The texture proves fleshy and velvety, carried by very subtle tannins. A great fruity freshness accompanies a juicy yet voluptuous body, stretching into a mouth-watering finish with lovely mineral persistence.
Food and wine pairing
This red wine pairs perfectly with pink veal accompanied by a thyme jus and eggplant parmesan. More broadly, it will enhance delicate white meats, Mediterranean vegetables with herbs, fine charcuterie, or traditional Alpine mushroom-based dishes.
Service and storage
To fully appreciate the Bibi 2024, it is recommended to open or decant the bottle at least an hour before serving to let the wine breathe. The ideal tasting temperature is around 16°C. This wine can be enjoyed now and will continue to evolve favourably, drinking well until around 2038.
Other characteristics
This wine stands out for its moderate alcohol content of 10%, offering a particularly easy-drinking profile focused on aromatic freshness.
The authentic and natural expression of Domaine Partagé - Gilles Berlioz in Savoie
The estate
Founded in 1990 by a former landscaper, Domaine Partagé - Gilles Berlioz has established itself as a key reference in Savoie. Initially spanning 0.8 hectares, the vineyard now covers an area of 4 to 6 hectares. Led by Gilles and Christine Berlioz, the estate was renamed in 2014 to reflect their collaborative approach to winemaking. Deeply committed to environmental respect, the estate practises certified biodynamic farming, ruling out any mechanisation in favour of animal traction and entirely manual work, in order to reveal the purest expression of its terroirs.
The vineyard
Located on the foothills of the Bauges massif, this Vin de Savoie Chignin vineyard rises to altitudes of between 250 and 440 metres. The vines, aged 20 to 50 years, thrive on clay-limestone soils benefiting from ideal east and south-west exposures, particularly on the plots known as Les Plantets and Pré Callet. The soil is worked exclusively using horses, thereby preserving the structure of the land.
Winemaking and aging
The Bibi 2024 grapes are hand-harvested into small crates to preserve the integrity of the berries. In the cellar, the grapes undergo very gentle pneumatic pressing. Co-fermentation takes place at low temperature, relying exclusively on indigenous yeasts. The wine is moved by gravity to avoid any oxidation. Finally, aging takes place in ovoid fibreglass vats, a shape that promotes the natural circulation of the wine while preserving the brightness of the fruit and the identity of the terroir.
Grape varieties
50% Gamay, 50% Mondeuse.
