Tasting
Colour
The wine displays an intense, luminous ruby-red hue with subtle purple and garnet highlights.
Nose
Subtle and deep, the bouquet opens with notes of red and black fruit such as morello cherry, black cherry and raspberry. Delicate floral touches reminiscent of dried rose and violet follow, underpinned by a mineral backbone of graphite, gentle spices and undergrowth.
Palate
The palate stands out for its sleek, silky profile. Driven by lively acidity and fine tannins, it reveals a taut mineral structure. The finish is long, chiselled and saline, with flavours of cold stone, tart cherry and black tea.
Food and wine pairings
This wine pairs beautifully with refined white meats such as truffled veal tenderloin, or with poultry such as roast duck with cherries. It is also an excellent match for traditional dishes like coq au vin, as well as mature cheeses such as Comté or Époisses.
Serving and cellaring
Endowed with a fine structure, this Gevrey-Chambertin 1er cru "Combottes" 2023 shows great ageing potential and can be cellared for enjoyment until around 2038.

The estate
The Trapet family's history in Burgundy dates back to the 19th century, but it was in 1993, following a family division, that the current Domaine Trapet came into being. Based in Gevrey-Chambertin, the estate is now run by Jean-Louis Trapet, supported by his wife Andrée and their sons. The vineyard covers nearly 20 hectares, located mainly in the Côte de Nuits and the Côte de Beaune. A pioneer in its approach, the domaine has farmed all of its vines biodynamically since the late 1990s, seeking to express the purest authenticity of its terroirs.
The vineyard
The Les Combottes climat enjoys a unique location in the north of the Gevrey-Chambertin appellation, on the border with Morey-Saint-Denis. Nestled between two illustrious terroirs, this plot lies mid-slope on shallow, highly calcareous soils composed of white marl and gravel. This free-draining terroir, carefully farmed biodynamically, encourages the vines to root deeply, promoting freshness and mineral tension in the grapes.
The vintage
The 2023 vintage was marked by conditions conducive to excellent fruit ripeness and a certain warmth. These were perfectly balanced by the natural freshness of the climate, preserving the vibrancy and sleek profile typical of this terroir.
Winemaking and ageing
The grapes are harvested by hand, followed by rigorous sorting. The Gevrey-Chambertin 1er cru "Combottes" 2023 is vinified with indigenous yeasts, favouring a gentle infusion-style maceration with a proportion of whole bunches. The wine is then aged in oak barrels for around 16 months, with a moderate 15 to 20% of new wood, in order to preserve the brightness of the fruit and the identity of the climat.
