    Tasting Notes

    Appearance

    The wine reveals an intense purple hue, clear and brilliant.

    Nose

    The nose displays beautiful aromatic concentration with fragrances of ripe black fruits such as blackberry, plum and blackcurrant. The bouquet is enriched with notes of vanilla, sweet spices and cocoa, accompanied by smoky and mineral touches. Fresh floral scents of violet and rose harmoniously complete this seductive olfactory profile.

    Palate

    The attack is full and silky, revealing a velvety texture. The fine, precise tannins, with a chalky grain, bring great finesse and balance. The palate reveals flavours of black cherry, chocolate and liquorice, enhanced by a hint of charcoal and dried flowers. Remarkable freshness carries through to a long, harmonious and elegant finish, marked by beautiful aromatic intensity and a mineral, chalky dimension.

    Food and Wine Pairing

    Flor de Pingus 2023 pairs perfectly with honey-braised duck breast, rosemary lamb chops or a Wagyu beef fillet with sautéed shiitake mushrooms in soy sauce. It also pairs beautifully with roasted meats and aged cheeses.

    Serving and Ageing

    Flor de Pingus 2023 is best enjoyed at a temperature of between 16 and 18°C. This wine can be appreciated from 2026 and has an ageing potential of up to around 2040.

    The Estate

    Founded in 1995 by Danish oenologist Peter Sisseck, Dominio de Pingus immediately established itself as one of the most prestigious estates in Spain. Located in Ribera del Duero, in the heart of Castilla y León, the vineyard spans 4 hectares of old, ungrafted tinto fino vines, planted between 800 and 837 metres above sea level on clay-limestone soils. Peter Sisseck favours a natural approach and minimal yields to produce exceptional wines in extremely limited quantities, making Pingus one of the most sought-after Spanish wines in the world.

    The Vineyard

    Flor de Pingus comes exclusively from 28 selected plots located in La Horra, in Ribera del Duero, covering 35 hectares. These old vines, over 50 years old, are trained using traditional stakes on clay-limestone soils at 900 metres above sea level. Planting density reaches 5,000 vines per hectare, with yields deliberately limited to between 9 and 20 hectolitres per hectare. The entire vineyard is certified organic and biodynamic, reflecting the estate's commitment to environmentally responsible viticulture.

    The Vintage

    The 2023 vintage in Castilla y León was marked by extreme weather conditions, with high temperatures and significant water deficit. Despite these constraints, rigorous vineyard management preserved the freshness and balance of the grapes. Peter Sisseck considers this vintage to be one of the estate's finest harvests, alongside 1996 and 2000, standing out for its great precision and incredible freshness. Hand-picking was carried out over several passes to select the finest fruit.

    Winemaking and Ageing

    The grapes for Flor de Pingus 2023 are hand-harvested and vinified separately according to plot. Fermentation takes place in concrete vats and 6,000-litre new oak barrels. Ageing is carried out in two stages: 14 months in French barrels, of which 20% is new oak, followed by 12 months in 2,000-litre wooden vats. Bottling is scheduled for May-June 2025.
