    Tasting

    Colour
    Clear and pure, the colour reveals a pale yellow hue with subtle green highlights.

    Nose
    The bouquet opens with fresh floral and fruity aromas, marked by citrus notes and subtle spicy touches reminiscent of coriander. The whole is underscored by a mineral backbone and a delicate salinity evoking oyster shell.

    Palate
    Harmonious and well-structured, the palate reveals a lovely vivacity wrapped in a smooth, refined texture. The mineral identity of the terroir is fully expressed, leading to a long, complex finish.

    Food and Wine Pairing

    This white wine pairs beautifully with oysters, pan-fried or grilled white fish, as well as scallops. It also goes wonderfully with white meats in cream and mushroom sauce, veal sweetbreads, or fresh goat cheese.

    Service and Storage

    For optimal tasting, it is recommended to serve this Chablis Grand Cru "Vaudésir" 2022 at a temperature of around 13°C. This wine can be enjoyed now, but will continue to evolve favourably until around 2032.

    The Elegance and Minerality of a Chablis Wine

    The Estate

    Founded in 1880 by Joseph Drouhin, the eponymous House is a historic figure of Burgundy. The estate's Chablis history began in 1968 under the impetus of Robert Drouhin, who recognised the potential of this terroir. In 2008, the wines of this appellation took the name Drouhin Vaudon, in tribute to the historic mill acquired by the family. Now run by Frédéric Drouhin, the estate oversees a vineyard of 100 hectares, 38 of which are dedicated to Chablis. The estate stands out for its pioneering commitment to organic and biodynamic farming.

    The Vineyard

    Located in the north of Burgundy, the Chablis terroir is distinguished by its unique Kimmeridgian limestone soils, rich in marine fossils. The Vaudésir plot, forming a natural amphitheatre of 15.4 hectares, benefits from a dual north-south exposure. The estate cultivates nearly two hectares of vines here, some of which are over forty years old. The soils, composed of calcareous marl and a significant proportion of clay, combined with deliberately limited yields, favour a pure and concentrated expression of the fruit.

    The Vintage

    The 2022 vintage was characterised by hot and particularly dry weather conditions. After a difficult previous year, the vines showed excellent vegetative vigour. Despite the heat, yields remained moderate and acidity levels were preserved. The timing of the harvest played a decisive role that year, with an early harvest proving essential to maintain the balance and freshness of the berries.

    Winemaking and Aging

    The grapes are harvested by hand using perforated crates. Whole clusters undergo slow, gentle pressing in a pneumatic press, where the final juices are separated out. After light settling, the must is transferred into 500-litre used oak barrels. Fermentation and aging of this Chablis Grand Cru "Vaudésir" 2022 take place in these same barrels for a period of 12 to 15 months, without any use of new wood, in order to preserve the identity of the terroir.
