The estate

The Fabien Jouves - Mas del Perié estate, taken over by him in 2006, is perched on the highest hillsides of Cahors. After immediately converting the vineyard to organic and then biodynamic farming, this passionate viticulturist has dedicated himself to making natural wines without sulfur and without artifice that respect the identity of the terroirs. An extraordinary winemaker from an old peasant family of the Causse, he is now the leading figure of "natural" winemakers in his appellation. Fabien Jouves has paved the way for excellence in Cahors and continues to innovate and experiment with each new vintage, offering a very diverse range of wines from the South-West.

The vineyard

The B763 cuvée is a Cahors wine from the plot of the same name located on the highest hillsides of the appellation. The vines are on average 50 years old.

Vinification and aging

After the harvest, the grapes are destemmed and vinified in the cellar in a natural way without oenological inputs. Fermentation in ovoid tanks. The aging is done in ovoid tanks for 30 days and then in barrels for 18 months.
