Tasting
Appearance
Antique Oloroso displays a deep chestnut colour, with dense highlights that immediately reveal its long time spent in cask. This intense hue bears witness to the twenty years of oxidative ageing that have shaped the wine, giving it a visual intensity that matches its aromatic complexity.
Nose
The nose is intense and generous, marked by the classic hallmarks of long oxidative ageing. Nuts, led by hazelnuts and walnuts, come through with great clarity, accompanied by notes of orange peel that lend a touch of freshness to this rich, deep aromatic profile.
Palate
On the palate, Antique Oloroso is smooth and enveloping, before giving way to a dry and remarkably long finish. This balanced structure, carried by a lively acidity, gives the wine great persistence and an elegance that make it an Oloroso of real character.
Food pairings and tasting occasions
Antique Oloroso is a delightful match for charcuterie, cheeses, game, mushrooms and slow-cooked dishes. Its aromatic richness and length on the palate make it an ideal companion for dishes with intense, deep flavours. It is best served between 12 and 16°C, a temperature that fully reveals the complexity of its bouquet without dulling its freshness.
Mixology
Antique Oloroso is an exceptional Sherry, the result of long oxidative ageing in solera. We recommend enjoying it just as it is, neat, in order to fully appreciate the richness and complexity it has developed over its twenty years of ageing.

The estate
Fernando de Castilla is a house based in Jerez de la Frontera, in the heart of the golden triangle of Spanish Sherry. Founded in 1972, it initially devoted itself to producing high-quality brandies and Sherry wines. In 1999, the Norwegian Jan Pettersen, who now heads the bodega, acquired it and transformed it into a true “boutique bodega” entirely dedicated to premium and super-premium Sherries. Thanks to a dedicated viticultural partnership and expert command of the criaderas y soleras system, the house today produces a tightly focused range of uncompromising quality, with the Antique series as its flagship.
The wine
Antique Oloroso is made from 100% Palomino Fino grapes grown in the Andalusian region of Jerez de la Frontera. The must is pressed and then fermented in stainless steel tanks, before being fortified to 20% to steer the wine towards an exclusively oxidative evolution. It then undergoes a long ageing period of twenty years in oak butts, following the traditional criaderas y soleras system.
