    Color
    The color reveals a delicate pale golden hue, enhanced by crystalline clarity and beautiful luminosity, reflecting a non-oxidative approach.

    Nose
    Exceptionally complex and constantly evolving, the nose opens with aromas of candied citrus, exotic fruits and subtle spicy notes reminiscent of curry. With aeration, it reveals hints of toasted cereals, nuts such as hazelnut and walnut, as well as nuances of dried stone fruit. A herbaceous undertone and a deep minerality reminiscent of gunflint perfect this dynamic bouquet.

    Palate
    On the palate, the wine stands out for its vibrant tension and remarkable freshness. The elegant and sophisticated attack gives way to a texture of great finesse, perfectly balanced by pronounced salinity. The mid-palate recalls dried fruits, extending toward a long, well-defined finish, where citrus acidity blends harmoniously with a persistent mineral imprint.

    Food and wine pairing

    This great white wine from France pairs wonderfully with aged regional cheeses, such as an old Comté. Its salinity and freshness also make it an ideal companion for a seafood platter, oysters or scallops, as well as dishes delicately seasoned with dried herbs or mild spices.

    Service and storage

    To fully appreciate the complexity of the "Professeur Sous Roche" 2022, it is recommended to store it in a cool environment, ideally between 10 and 12°C. With remarkable aging potential, this wine can be enjoyed now or cellared until around 2032.

    Other characteristics

    This wine has an alcohol content of 13.5%. Made without fining or filtration, it may show a slight natural sediment, a testament to its authenticity. Bottling is carried out by gravity to preserve the full delicacy of its aromas.

    The estate

    Officially founded on April 1, 2007, the François Rousset Martin estate is located in Nevy-sur-Seille, at the heart of the Jura vineyards. After honing his craft in the Rhône and making wine in a cooperative, François Rousset-Martin, the current owner and a trained oenologist, gradually took over and expanded the family estate to reach about ten hectares. Guided by an organic philosophy and a rigorous scientific approach, he favors minimalist interventions. His masterful work was recognized in 2026 with the award of three stars in the prestigious Revue du Vin de France guide.

    The vineyard

    The cuvée comes from the prestigious "Sous Roche" plot, a 0.25-hectare terroir located just below the village of Château-Châlon, within the Côtes du Jura appellation. The vines, around thirty years old, thrive on complex soils made up of Upper Jurassic grey marls and clay-limestone substrates. This distinctive geology gives the grapes a vibrant minerality. The vineyard is managed according to organic and biodynamic principles, with controlled yields and exclusively manual harvesting to ensure optimal ripeness.

    The vintage

    In eastern France, 2022 presented very particular climatic characteristics. These specific weather conditions directly influenced the vine's growth cycle, playing a decisive role in the development of phenolic ripeness and the balance of acidity levels in the berries at harvest.

    Winemaking and aging

    After slow pressing, the juices of the "Professeur Sous Roche" 2022 ferment spontaneously in 228-liter Burgundian oak barrels, through the exclusive action of indigenous yeasts. Malolactic fermentation also occurs naturally. The wine is then aged for an exceptional period of thirty-three months. It is aged "ouillé", meaning the barrels are regularly topped up to prevent oxidation under a veil of yeast, allowing it to develop great aromatic complexity while preserving the freshness of the fruit.
