Hatozaki is a Japanese whisky launched in 2018 by the Kaikyo distillery, located in Akashi in Hyogo Prefecture. Founded in 2017, it is part of the legacy of the Yonezawa family, saké specialists since 1856. Today, Kimio Yonezawa, fourth-generation master distiller and blender, leads the family estate. The name Hatozaki pays tribute to Japan’s oldest stone lighthouse. The brand stands out for its sophisticated multi-cask approach, using a range of vessels including Mizunara oak and Umeshu casks, delivering remarkable aromatic complexity.
Umeshu: a single malt blend finished in Umeshu casks
Hatozaki Umeshu Cask Finish 12 Years Old is the result of a meticulous small-batch blend of single malts. Each whisky was first aged for 12 years in American oak barrels that previously held bourbon, before benefiting from a 6-month finish in Umeshu casks, this traditional Japanese plum liqueur.
The Umeshu used for this finish is crafted according to a rigorous artisanal process. The plums are selected in Hyogo Prefecture, then macerated for 6 months in Ginjo saké before aging for 2 years in enameled vats. This liqueur lends this Japanese whisky its delicate fruity notes of pear and apricot, along with a signature sweetness on the finish. Released in 2022, this limited edition is bottled at 46% in a 70cl bottle, with no added coloring.
