    Tasting

    Appearance
    This red wine displays a deep, dark garnet hue, enhanced by delicate violet highlights in its youth.

    Nose
    The aromatic bouquet opens with notes of candied fruit, evoking morello cherry and redcurrant. It then gains complexity with characteristic touches of garrigue, liquorice and cocoa.

    Palate
    Fleshy and dense, the palate reveals a fine, concentrated texture supported by structuring tannins. The tasting lingers on a long finish marked by flavours of spice and caramel.

    Food and Wine Pairing

    This wine of character pairs perfectly with flavourful red meats such as rib of beef, or with traditional slow-cooked dishes such as a daube.

    Serving and Cellaring

    For optimal enjoyment, this 2023 vintage is best served at a temperature of 16–19°C and decanted in its youth. Blessed with exceptional ageing potential, this wine can be cellared and enjoyed until around 2043.

    The Authentic Expression of the Pic Saint-Loup Terroir by Héritage du Pic Saint-Loup

    The Estate

    Located in Saint-Mathieu-de-Tréviers in the Languedoc, the Héritage du Pic Saint-Loup estate boasts an agricultural history dating back to the 13th century. The modern wine estate, however, was founded in 1992 under the name Ermitage du Pic Saint Loup, before adopting its current name in 2023. Today, the brothers Jean-Marc, Pierre and Xavier Ravaille are at the helm of the property. They run this family vineyard with a philosophy centred on respect for the environment, elevating the estate to one of the leading benchmarks of its appellation.

    The Vineyard

    The vines used for this cuvée thrive on the foothills of the Pic Saint-Loup massif, at altitudes of up to 650 metres. This singular terroir is made up of free-draining clay and limestone soils dating from the Quaternary period, strewn with rounded pebbles. The estate farms these plots of very old, century-old bush-trained vines according to the principles of organic and biodynamic viticulture. These demanding conditions naturally limit yields, ensuring optimal concentration in the berries.

    Vinification and Ageing

    "Guilhem de Gaucelm" 2023 is made using traditional vinification methods, including regular punch-downs. This technique allows for a gentle, controlled extraction of tannins and aromas. The wine then undergoes a long ageing period of 24 to 30 months in foudres, which refines its structure and develops its complexity before bottling.

    Grape Varieties

    This wine is a blend of Syrah (50%) and Grenache (50%).
