    Tasting

    Colour
    The colour reveals a pale to light golden hue, characteristic of white wines from cool climates.

    Nose
    Beautifully complex, the nose exudes aromas of orange blossom, morello cherry and raspberry, subtly intertwined with notes of humus, coffee and clove. The whole is underpinned by great fruity freshness and a precise mineral expression.

    Palate
    The palate opens with a perfect balance between a smooth texture and a vibrant acidity. It stands out for its mineral precision derived from the limestone soils, offering a remarkable harmony that extends into a beautifully lingering finish.

    Food and wine pairing

    This white wine pairs wonderfully with seafood, shellfish or fresh fish. It will also enhance a charcuterie board, matured goat's cheeses, as well as spring dishes based on vegetables, mushrooms or fresh herbs.

    Service and storage

    For optimal enjoyment, it is recommended to serve this Saint-Aubin 1er Cru 2023 at a temperature between 11 and 13°C. Approachable from today, this wine can be cellared until around 2028 to develop further textural complexity.

    The mineral precision and freshness of a Burgundy Premier Cru

    The estate

    Established in France in the region of Burgundy, the estate was officially founded in 1920 in the village of Corpeau. Representing the fifth generation of his family, Jean-Charles Fagot took over the management of the property in the mid-1990s. At the helm of a three-hectare vineyard supplemented by carefully selected grape purchases, he stands out for an approach that combines sustainable viticulture with gastronomy. Indeed, the winemaker owns his own restaurant, offering an ideal setting in which to showcase his wines, which express their terroir with great authenticity.

    The vineyard

    This wine comes from the Saint-Aubin appellation, located in the Côte de Beaune, an area renowned for its very high concentration of Premiers Crus. The vines thrive on soils composed of limestone and clay. This cuvée is the result of a careful blend of two small classified plots, "Sur Gamay" and "Les Frionnes". The estate favors sustainable viticulture through integrated pest management, including green harvesting and manual picking to ensure optimal quality and preserve soil biodiversity.

    The vintage

    The year 2023 proved to be particularly favorable. The growing cycle benefited from abundant rainfall and mild weather conditions during the harvest. This ideal climate allowed the berries to reach optimal phenolic and technical ripeness without stress, resulting in a generous harvest.

    Winemaking and aging

    The making of this Saint-Aubin 1er Cru 2023 relies on traditional and natural winemaking. After gentle pressing, fermentations are carefully monitored to preserve the purity of the fruit. Aging takes place over a period of 12 to 14 months on the lees, combining large neutral oak foudres with smaller barrels. This tailored method adds complexity to the wine while controlling the impact of the wood, allowing the terroir to fully express itself.
