Description
The precision and freshness of a Chablis wine
The estate
Established in 1955 in Milly in Burgundy, Domaine Jean Dauvissat Père et Fils covers 22 hectares spread over 53 plots across seven communes in the Chablis region. Fabien Dauvissat, grandson of the founder, now runs the estate with his father Philippe, representing the fourth generation. Since 2009, Fabien has converted the estate to organic farming. This mosaic of terroirs on both banks of the Serein allows the production of cuvées expressing the typical minerality of Burgundy's Kimmeridgian limestone.
The vineyard
This Chablis Village "Mont-Main Sourdelle" comes from vines planted in the village of Beines, on the left bank of the Serein, facing the premiers crus Côte de Léchet and Vau de Vey. The terroir lies on Kimmeridgian limestone soils, the geological signature of this essential Burgundy appellation. This exposure gives the wine a firm minerality and a precise expression of fruit characteristic of Chablis village.
The vintage
The year 2023 in Chablis began with a mild winter followed by a spring whose frosts had little impact on the estate. From April to June, instability required increased vigilance in the vineyards. Despite the summer drought, the berries were healthy and of high quality.
Winemaking and ageing
Long and gentle pressing followed by static settling for 12 to 24 hours. Fermentation using indigenous yeasts. Malolactic fermentation before ageing divided between 600-liter demi-muids and tanks, then blending after 12 months. Additional ageing of 6 months before bottling.
Grape variety
This Chablis Village "Mont-Main Sourdelle" 2023 from Jean Dauvissat is 100% Chardonnay.
