    This white wine reveals a beautiful, luminous concentration.

    Nose
    The aromatic bouquet opens with notes of citrus, blending lemon and grapefruit, accompanied by touches of green apple and pear. On aeration, delicate scents of white flowers emerge, underscored by subtle nuances of lemon zest.

    Palate
    With a lovely natural acidity, the palate offers a taut, refined structure. It stands out for its pronounced minerality, evoking gunflint, characteristic of its terroir. Flavours of peach, melon and honey enrich the palate, leading to a dry, elegant and lingering finish.

    Food and wine pairing

    This cuvée pairs wonderfully with seafood, particularly fresh oysters, mussels or scallops. It also perfectly accompanies grilled or white-fleshed fish such as halibut and sole. For more original pairings, this wine will elevate a chicken dish marinated with candied lemon, a vegetable risotto or creamy cheeses. It is also ideal as an aperitif.

    Service and storage

    For an optimal tasting experience, it is recommended to serve this Chablis Village 2023 at a temperature between 9 and 10°C. While it can be enjoyed in its youth for its vibrant freshness, it has the structure needed to evolve favourably in the bottle and can be enjoyed until around 2031.

    This dry wine has a medium-bodied profile, with an alcohol content ranging from 12.0 to 12.5% and a pH measured between 3.25 and 3.42 after fermentation.

    A great white wine from Burgundy by Jean Dauvissat

    The estate

    Founded in 1955 by Jean Dauvissat, the family domaine is located in Milly, at the heart of Burgundy, France. Now run by Fabien Dauvissat, the founder's grandson, this independent estate spans 22 hectares. Since taking over in 2009, Fabien has brought new momentum by converting the vineyard to organic farming, certified in 2018, and applying the principles of biodynamics. The estate stands out for its commitment to preserving the authentic expression of its terroirs through environmentally friendly practices.

    The vineyard

    The vineyard from which this Chablis originates rests on clay-limestone soils from the Kimmeridgian era, rich in marine fossils and small stones, offering excellent drainage. The vines are cultivated according to the principles of organic and biodynamic farming. The estate promotes biodiversity by planting legumes between the rows and uses horse-drawn ploughing to preserve soil vitality and prevent compaction.

    The vintage

    The year 2023 offered a generous growing season, producing juice volumes higher than in previous years. As natural acidity levels were slightly lower, particular attention was paid to the harvest date to preserve tension and mineral precision. This vintage thus proves rounder and more fruit-driven, while retaining a lovely freshness.

    Winemaking and aging

    The grapes for this Chablis Village 2023 are harvested at optimal ripeness and undergo rigorous selection. Fermentation takes place plot by plot, using indigenous yeasts, in temperature-controlled stainless steel vats to preserve the purity of the fruit. The wine then benefits from extended aging on fine lees, ranging from one to two years.
