    Tasting

    Colour
    The glass reveals a bright pale yellow, streaked with delicate silvery-green highlights that underscore its freshness.

    Nose
    The aromatic bouquet opens with floral notes of acacia and white flowers, before evolving towards aromas of candied citrus and tangy sweets.

    Palate
    The attack is fresh and precise, supported by lovely acidity. The palate reveals citrus flavours, such as lemon and grapefruit, mingled with stone fruits like nectarine. In the mid-palate, touches of blanched almond and hazelnut emerge, underscored by a minerality reminiscent of flint. The finish is long, saline and wonderfully pure.

    Food and Wine Pairing
    Ideal alongside white fish, this white wine also pairs wonderfully with a mushroom risotto or matured cheeses such as Comté and goat's cheese. More broadly, it will enhance oysters, delicate poultry, smoked fish or dishes featuring asparagus.

    This Chablis 1er Cru "Montmains" 2023 can be enjoyed now, but will reveal its full complexity with time. It can be drunk until around 2033.

    The Estate
    The story of Jean-Marc Brocard began in 1973 with the planting of a hectare and a half of vines in Préhy, at the heart of the Chablis vineyards, a flagship appellation of Burgundy. Driven by a commitment to respecting nature, the family has built an estate renowned for its sustainable approach and precision. Today, Julien Brocard, the founder's son, heads the estate. A pioneer of biodynamics in the region, he continues to uphold the family's values, crafting wines that authentically and purely express the full richness of their terroirs of origin.

    The Vineyard
    The Montmains climat is an iconic terroir, characterised by Kimmeridgian marl and limestone soils rich in marine fossils, covered by a thin layer of clay. The plots benefit from south-east and north-east exposure, offering morning sunshine combined with constant ventilation. The vines, around thirty years old, are cultivated according to organic farming principles with a planting density of approximately 5,700 vines per hectare.

    The Vintage
    2023 was marked by warm, sunny weather, with conditions described as a period of drought. However, the vines benefited from sufficient rainfall which, thanks to the deep root systems of the vines, resulted in berries brimming with juice. This balance between sunshine and water reserves favoured optimal ripening of the grapes while preserving lovely freshness.

    Winemaking and Aging
    The harvest is carried out both by hand and by machine. The grapes are transported by gravity to preserve their integrity before undergoing pneumatic pressing and extended maceration. Fermentation takes place using indigenous yeasts at controlled temperatures of between 18 and 20°C, followed by complete malolactic fermentation. Aging lasts around 14 months on fine lees, taking place 70% in large oak foudres and 30% in stainless steel tanks.
