Tasting
Colour
The wine displays a bright, clear red hue with a lovely luminosity.
Nose
Surprisingly intense, the aromatic bouquet opens with generous notes of ripe red and black fruit, such as raspberry, cherry and blackberry jam, lifted by subtle hints of spice.
Palate
Tender and graceful, the palate charms with its roundness and silky texture. Supple tannins carry a flavourful, lingering finish, marked by delectable black fruit aromas.
Food and wine pairing
Particularly easy-drinking and versatile at the table, this red wine pairs harmoniously with a wide variety of dishes without ever overpowering them. It is an ideal match for white meats, roast poultry or soft cheeses.
Serving and cellaring
For optimal enjoyment, this wine is best served at 16°C. While it offers immediate pleasure in its youth, it has the ageing potential to evolve until around 2033, developing noble aromas of undergrowth and truffle.
The delectable and elegant expression of a great Burgundy village
The estate
Founded in Beaune in 1880 by a 22-year-old, Maison Joseph Drouhin is a true institution in Burgundy. Still entirely family-owned, it is now run by the fourth generation, with Frédéric Drouhin as its president. A pioneer of organic and biodynamic farming since the late 1980s, the house tends a vast vineyard stretching from Chablis to the Mâconnais. The estate stands out for its constant pursuit of naturalness, producing cuvées that express the richness of their terroirs of origin with great faithfulness and remarkable elegance.
The vineyard
Located in the northern part of the Côte de Beaune, the Chorey-les-Beaune appellation lies on the plain at the foot of the famous hill of Corton. The vines thrive on deep clay-limestone soils scattered with sand and gravel. This cuvée is the result of a meticulous blend of family-owned parcels and grapes carefully selected from partner growers, all farmed with the utmost respect for the environment.
The vintage
2023 ranks among the hottest vintages ever recorded in the region, surpassing even the temperatures of 2022. Despite the pronounced summer heat, the growing cycle unfolded in excellent conditions, yielding a generous harvest. The grapes were picked in perfect health and at optimal phenolic ripeness, without suffering from excessive water stress.
Vinification and ageing
The grapes are harvested by hand and rigorously sorted. To craft this wine, the bunches are fully destemmed before being placed in small open vats. Fermentation begins with indigenous yeasts, accompanied by regular punching down and pumping over for two to three weeks. After pressing in a vertical press, which allows the final press fractions to be kept separate, the wine is aged in French oak barrels (around 20% new) for 12 to 16 months.
