    Tasting

    Appearance

    The wine displays a deep ruby-red color with garnet highlights.

    Nose

    The balsamic bouquet reveals aromas of dried small red berries, wild rose and spices. Notes of cocoa bean and vanilla complete this complex aromatic palette.

    Palate

    On the palate, this wine charms with its fullness and silky, enveloping tannins. The elegant body lingers into a long, spicy finish.

    Food and wine pairing

    This 2021 Barolo Cannubi pairs perfectly with fresh egg pasta and meat-filled ravioli. It also enhances red meats, braised dishes and game. For cheese, opt for sheep’s and goat’s tomme-style cheeses, as well as aged hard cheeses.

    Serving and cellaring

    Serve this 2021 Cannubi at a temperature of 16°C to fully appreciate its qualities. This wine reaches optimal maturity six years after harvest and can continue to improve for up to around 25 years.

    An exceptional Barolo from the prestigious Cannubi cru in Piedmont

    The estate

    Founded in 1814 by Juliette Colbert de Maulévrier and Carlo Tancredi Falletti, Marquis of Barolo, Marchesi di Barolo represents the historic birthplace of modern Barolo in Piedmont. Acquired in 1929 by Pietro Abbona, the estate has remained in the Abbona family for six generations. Farming 130 hectares of vineyards in the Langhe, the estate perpetuates the excellence of Piedmontese Nebbiolo and has been vinifying the historic crus Cannubi, Coste di Rose and Sarmassa as single crus since 1973.

    The vineyard

    The Cannubi vineyard lies on the hill of the same name, at the heart of the Barolo appellation. The vines thrive on predominantly clay-limestone soils made up of Sant'Agata marls, dating from the Serravallian and Tortonian periods. Hand harvesting begins in the final days of September, ensuring the grapes are picked at optimal ripeness.

    Winemaking and aging

    After 15 to 18 days of maceration with rack-and-return and repeated pump-overs, fermentation takes place at a controlled temperature between 24 and 26°C. The 2021 Cannubi then undergoes clarification in vitrified concrete vats. The first year of maturation takes place in small French oak barrels, followed by a second year in large Slavonian oak casks. The wine then rests for at least one year in bottle before release.
