    Tasting

    Appearance
    The wine displays a pale, luminous yellow hue, often accented by subtle green highlights in its youth.

    Nose
    Fresh and remarkably precise, the bouquet opens with citrus notes such as lemon, alongside green apple and orchard fruits. Delicate touches of white flowers and a mineral backbone complete the picture.

    Palate
    The attack is lively and energetic. The palate stands out for its lovely tension and refreshing acidity, leading to a particularly mouthwatering, easy-drinking finish, at times wrapped in a very discreet roundness.

    Food and wine pairings

    Ideal as an aperitif, served on its own or in a classic Kir, this white wine pairs beautifully with jambon persillé, snails, seafood or fresh cheeses such as faisselle.

    Serving and cellaring

    To fully enjoy this Bourgogne Aligoté 2025, we recommend serving it at a temperature between 10 and 12 °C. It can be enjoyed now or cellared until around 2030.

    The Freshness and Precision of a White Burgundy by Olivier Leflaive

    The estate

    Founded in 1984, Olivier Leflaive is a leading name in Burgundy, France. Located on the legendary square of Puligny-Montrachet, it stands out for its hybrid model as both négociant-éleveur and estate owner. Today, the estate farms around one hundred hectares, 26 of which are its own, spread across 82 prestigious climats. Still run by its current owners, brothers Olivier and Patrick Leflaive, the estate is also a pioneer of regional wine tourism. It masterfully combines family tradition, hospitality and technical rigour to reveal the quintessence of its terroirs.

    The vineyard

    The grapes for this Burgundy wine come from carefully selected plots, mainly located in the villages of Puligny-Montrachet, Corpeau and Meursault, in the heart of the Côte de Beaune. Set at an average altitude of 220 to 230 metres, the vines, around forty years old, thrive on clay-limestone and clay-silt soils. The estate favours sustainable, reasoned viticulture, with mostly hand-harvested grapes to preserve the integrity and freshness of the berries.

    Vinification and ageing

    Upon arrival at the winery, the grapes destined for the Bourgogne Aligoté 2025 are gently pressed in a pneumatic press. The musts then undergo static settling for 24 hours to clarify them. Ageing lasts 10 months, divided between stainless steel tanks and oak barrels, in carefully adjusted proportions to enhance the purity of the fruit while adding a subtle patina.
