Description
Characteristics and Tasting Tips for the Pernand-Vergelesses Village 2025 by Olivier Leflaive
Tasting
Nose
The aromatic bouquet opens with delicate notes of white flowers such as hawthorn, acacia and elderflower, occasionally nuanced by a hint of green tea. With time, it reveals a beautiful complexity, turning towards aromas of honey, amber, spices and dried fruits.
Palate
On the palate, this white wine stands out for its balance and fluidity. The attack reveals a luminous texture, carried by a mouthwatering, savoury and saline freshness, typical of the great terroirs of the Côte de Beaune.
Food and Wine Pairings
This cuvée pairs wonderfully with white meats, dishes in sauce such as pork with mustard, or poultry. It will also elevate a seafood risotto or a platter of blue cheeses.
Serving and Cellaring
Built to evolve beautifully in bottle, this Pernand-Vergelesses Village 2025 can be enjoyed in its youth or cellared and savoured until around 2032.
The Authentic Expression of a Great White Burgundy by Olivier Leflaive
The Estate
Founded in 1984, the négociant-éleveur house Olivier Leflaive is part of a long family winemaking tradition in Burgundy, France. Located in Puligny-Montrachet, the estate today farms around 100 hectares of vines, 26 of which are owned, spread across 82 prestigious climats. A pioneer of wine tourism in the region, the estate is currently run by Julie Leflaive and Jean Soubeyrand. They carry on the legacy of the house by offering cuvées that express the full richness of Burgundy's terroirs with precision and elegance.
The Vineyard
The terroir of Pernand-Vergelesses unfolds like an amphitheatre at the northern end of the Butte de Corton. Rising between 250 and 300 metres in altitude, the vines thrive on clay-limestone soils scattered with crushed stones and rocky outcrops. This topography offers varied microclimates and cool nights, ensuring slow and optimal ripening of the grapes. Committed to an environmentally respectful approach, the estate is certified Haute Valeur Environnementale Level 3, favouring soil work, yield control and exclusively hand-harvested grapes.
Winemaking and Ageing
As soon as they arrive at the winery, the grapes destined for the Pernand-Vergelesses Village 2025 are gently pressed, followed by static settling for approximately twenty-four hours. Alcoholic and malolactic fermentations take place in oak barrels. The wine is then aged for a total of twelve months, including a moderate proportion of new barrels (generally between 14% and 20%), before spending a few months in stainless steel tanks to refine the blend and preserve its aromatic freshness.
Grape Variety
This wine is made exclusively from 100% Chardonnay.
