    Appearance
    This wine reveals a beautiful golden hue, enhanced by delicate green highlights that reflect its remarkable freshness.

    Nose
    The aromatic bouquet opens with intense and characteristic notes of gunflint, accompanied by citrus aromas such as lemon and grapefruit. Subtle hints of green apple and white flowers complete this pronounced minerality.

    Palate
    Rich, dry and complex, the palate offers a well-structured framework supported by vibrant acidity. Flavours of citrus zest and white peach unfold, wrapped in a fine and elegant texture. The finish is long, aromatic and particularly noble.

    Food and wine pairings

    This cuvée pairs wonderfully with seafood, fish and white meats. It will perfectly enhance oysters, scallops, salmon en croûte or even creamy poultry with mushrooms.

    Serving and cellaring

    To fully appreciate Les Terres Blanches 2025, it is recommended to serve it at a temperature between 10 and 12°C, ideally after decanting for 15 to 20 minutes. Endowed with excellent ageing potential, this wine can be enjoyed until around 2035.

    The estate

    Founded in 1987, the Pascal Jolivet estate quickly established itself as a leading reference in the Loire Valley. Today, Pascal Jolivet remains the owner and head of this prestigious brand, supported by winemaker Valentina Buoso. The vineyard covers 120 hectares spread across the Sancerre and Pouilly-Fumé appellations, complemented by 60 hectares in Touraine. The House's philosophy is based on a natural approach and a deep respect for the terroir, allowing the creation of authentic, pure wines with remarkable minerality.

    The vineyard

    Originating from the village of Boisgibault, this single-plot selection showcases the full richness of the Pouilly-Fumé appellation. The vines, aged between 35 and 40 years, thrive on south and south-east facing slopes, at altitudes ranging from 190 to 230 metres. The terroir consists exclusively of clay-limestone soils, famously known as Kimmeridgian marls or "Terres Blanches". Certified organic, this plot is cultivated with controlled yields and harvested by hand to preserve the integrity of the berries.

    Vinification and ageing

    Upon arrival at the cellar, the grapes intended for the Les Terres Blanches 2025 cuvée are rigorously sorted. The vinification process favours gravity to respect the fruit, followed by a gentle pressing where only the free-run juice and the heart of the press are retained. After cold settling, fermentation begins naturally thanks to indigenous yeasts in temperature-controlled stainless steel vats. Finally, the wine benefits from ageing on fine lees for approximately 8 months, giving it all its complexity.
