    Tasting

    Color

    This wine pairs perfectly with grilled or roasted red meats, notably a rib-eye steak or a roast beef. It also elegantly complements braised dishes in sauce, roast lamb, or firm-fleshed poultry such as duck. When it comes to cheese, opt for soft, washed-rind cheeses such as Époisses or Livarot. Mediterranean dishes such as couscous or a meat tagine also make excellent pairings.

    The estate

    The Domaine Patrick Javillier traces its origins back to 1945, when Raymond Javillier decided to cultivate two hectares of family vines in Meursault. In 1974, his son Patrick, trained in oenology in Dijon, officially took over the estate and began its gradual expansion. Today, Marion Javillier and Pierre-Emmanuel Lamy run the property, which spans ten hectares in the Côte de Beaune. The estate is renowned for its precise, thoughtful approach to winemaking, combining technical rigor with deep respect for the expression of Burgundy terroirs.

    The vineyard

    The Aloxe-Corton Village 2021 comes from a 0.28-hectare parcel located at the foot of the Corton hill, at the transition between the Côte de Nuits and the Côte de Beaune. The vineyard benefits from a favorable eastern exposure and sits on clay-limestone soils with fragments of siliceous limestone. This distinctive geographic position gives the wine a fine expression of terroir, combining the characteristic vigor of Aloxe-Corton with finesse and elegance.

    The vintage

    The 2021 vintage was particularly challenging for Burgundy, marked by devastating frosts in April that led to historic crop losses, reaching 50 to 80% depending on the plots. Despite these difficult conditions, the grapes that survived benefited from favorable ripening conditions, making it possible to produce concentrated wines with vibrant freshness. The reduced crop load per vine naturally concentrated aromas and fruit intensity.

    Winemaking and Aging

    The grapes for the Aloxe-Corton Village 2021 are harvested by hand and then fully destemmed before being placed in concrete vats. A cold soak precedes fermentation, followed by a total vatting period of 11 to 15 days with regular punch-downs and pump-overs. Aging takes place in oak barrels, 50% of which are new, for around 12 months. The wine is neither fined nor filtered before bottling, thereby preserving its full aromatic complexity.
