    The estate

    Founded in 1945 by Raymond Javillier, the Domaine Patrick Javillier now spans 11 hectares in the heart of Meursault, in Côte de Beaune. Patrick Javillier, a trained oenologist, took over in 1974 and expanded the estate with a technical approach while respecting Burgundy traditions. Since 2005, his daughter Marion Roue Javillier, the current president, has overseen the production and marketing of the red wines, while Pierre-Emmanuel Lamy supervises the whites. This family-owned Burgundy estate stands out for its parcel-by-parcel winemaking philosophy, vinifying each climat separately to fully express the diversity of Côte de Beaune terroirs.

    The vineyard

    This Savigny-Les-Beaune comes from vineyards located in this picturesque village of Côte de Beaune, about three kilometers north of Beaune. The parcels extend in a distinctive V-shaped formation, at the meeting point of a valley and the plain, at elevations ranging from 220 to 360 meters. The soils—made up of stony limestone, red clay, ochre earth, and small stony scree—rest on a naturally low-fertility chalky limestone base. This geological composition promotes aromatic concentration in Pinot Noir grapes. The estate manages its vineyards with the utmost respect for the environment, prioritizing soil health and the authentic expression of the terroir.

    The vintage

    The 2021 vintage in Bourgogne ranks among the most challenging of the last decades. A catastrophic frost in early April, following a promising start to spring, devastated young buds across the entire region, resulting in historically low yields. The following months alternated between rainy spells and warm periods, creating pressure from fungal diseases. Despite these trying conditions, the vintage ultimately produced wines characterized by their freshness, fine texture, and elegant fruit expression. Reduced yields enabled a natural concentration of phenolic ripeness, giving rise to harmonious, elegant wines with moderate alcohol levels.

    Vinification and aging

    The grapes for the Savigny-Les-Beaune 2021 were fully destemmed prior to vinification, allowing precise control of tannin extraction and ensuring a refined texture in the finished wine. Fermentation was carried out with indigenous yeasts naturally present on the grapes, thus respecting the authentic expression of the terroir. Aging took place in oak barrels for several months, encouraging the integration of the wine’s components and the development of aromatic complexity.
