Appearance

The bouquet expresses the characteristic identity of Cabernet Sauvignon and Bin 707, with aromas of black olive tapenade, tobacco and chocolate. Notes of praline, dried beef and roast jus are added, accompanied by black cherries, fruit cake and rhubarb. The ensemble is rounded off by nuances of freshly ground cinnamon and pastry cream, revealing the characteristic complexity of Penfolds.
Palate
On the palate, this wine mirrors the nose without being overtly fruity. One finds aromas of blackberry and wild blackberry, savory and earthy notes, roast jus and meat juices as well as black olives. Exotic spices such as turmeric, bay leaf and chili emerge, accompanied by dark chocolate, praline and dried fruits from the barrel fermentation. The whole presents broad, structured and elegant tannins, offering complexity and refinement.

The Estate
A symbol of excellence, the Penfolds estate has established itself as a symbol of great Australian wines since the beginning of the 20th century, not least thanks to the tenacity of a bold figure: Mary Penfold. The famous British woman and her husband Christopher Rawson arrived in Australia in 1844 and very quickly acquired a 200-hectare estate in the heart of Adelaide. Enthusiastic about this wine paradise, Mary Penfold devoted herself body and soul to the management of the estate, making it the largest wine producer in South Australia.
Marked by depth, elegance and complexity, Penfolds wines have been acclaimed by critics for decades and awards for their quality are numerous.
The Vineyard
The Bin 707 Cabernet Sauvignon 2023 comes from three different regions in South Australia. McLaren Vale contributes with its varied soils and Mediterranean climate, Padthaway offers limestone terroirs that are ideal for Cabernet Sauvignon, while Barossa Valley complements the blend with its historic vineyards on diverse soils.
The Vintage
The 2023 vintage was marked by contrasting climatic conditions depending on the region. In McLaren Vale, a wet and cool spring with hail reduced yields, followed by a hot and dry summer that allowed for a late harvest with small, high-quality berries. Padthaway experienced a wet start, a cool and cloudy spring that slowed vine development, followed by a cool and wet growing season with favorable harvest conditions. Barossa Valley faced a challenging vintage: average winter rainfall, a dry start to spring, a cool growing season and extreme weather events such as floods and thunderstorms, which required careful vineyard management.
Vinification and aging
The Bin 707 Cabernet Sauvignon 2023 ages for 18 months in 100% new American oak barrels, which gives the wine its characteristic structure and integrated oak notes. This aging approach allows for the development of aromatic complexity while preserving fruit expression.
