    Tasting

    Colour
    The colour reveals a bright pale yellow hue.

    Nose
    The nose opens with aromas of citrus and white fruits such as peach and nectarine, accompanied by delicate floral notes. A mineral thread evoking gunflint and crushed rock enhances this bouquet.

    Palate
    The attack is marked by a lovely acidity that provides structure. The mid-palate reveals flavours of yellow plum and lime, offering a fleshy texture. The finish stands out with a saline minerality and persistent liveliness.

    Food and wine pairing

    This white wine pairs beautifully with fresh seafood such as oysters or grilled fish. It also perfectly accompanies roasted poultry in cream sauce, vegetarian dishes based on asparagus or mushrooms, as well as aged hard cheeses such as Comté or Gruyère.

    The brilliance and minerality of a Beaune Premier Cru

    The estate

    Officially founded in 2017 in Meursault, Domaine Pierre Girardin is run by Pierre-Vincent Girardin, representing the thirteenth generation of his family in Burgundy. Starting with 4.5 hectares kept by his father, the vineyard now spans approximately 13 hectares. The current owner stands out for his innovative approach, combining organic and biodynamic practices while seeking to express the purity of Burgundian terroirs through distinctive growing methods such as high trellising.

    The vineyard

    The Beaune Premier Cru plot spans 1.1 hectares, located on the border with Pommard. Unlike the more clay-rich neighbouring lands, this terroir is characterised by soils dominated by chalk and limestone. The vineyard is managed according to biodynamic principles, following the lunar calendar and using natural compost. Rigorous pruning that limits the number of buds, along with particularly high trellising, helps preserve vine health and grape freshness.

    The vintage

    The year 2023 began with a vigorous spring, marked by a mid-April frost episode that fortunately spared the buds. The summer season enjoyed generous sunshine, punctuated by heat peaks in July and some rainfall. These warm conditions led to particularly early harvests, which began on 23 August during the morning hours in order to preserve optimal freshness.

    Winemaking and aging

    Winemaking is carried out using indigenous yeasts with minimal intervention. Aging takes place first for twelve months in new 350-litre oak barrels. The wine is then transferred to stainless steel tanks for an additional three months. Bottling is done without fining or filtration in order to preserve the full aromatic complexity.
