    The estate

    Based in Meursault, in the heart of Burgundy, Domaine Pierre Girardin was founded in the mid-2010s. Representing the thirteenth generation of winegrowers in his family, Pierre-Vincent Girardin is the current owner and manager of this estate. He started with a core of 4.5 hectares of vines inherited from his father, before gradually expanding the vineyard. The estate stands out for its environmentally respectful viticultural approach, inspired by biodynamics, and its precise technical choices, thereby asserting a strong and contemporary identity.

    The vineyard

    This cuvée comes from the Climat classified as Premier Cru "Clos Saint-Jean", located within the Chassagne-Montrachet appellation area, in the Côte de Beaune. The vines benefit from a south-easterly exposure favourable to the gradual ripening of the grapes, and thrive on soils composed of light clay marls.

    Winemaking and aging

    The vinification favours a low-intervention approach. The grapes, vinified as whole bunches, ferment at low temperature in small stainless steel tanks fitted with floating lids to limit oxidation. Aging then takes place over approximately 12 months in large 456-litre oak barrels, including a proportion of new wood, followed by 7 months in tank. Bottling is carried out in accordance with the lunar calendar and atmospheric pressure.
