    Nose
    The bouquet unveils a beautiful minerality marked by aromas of gunflint, stone and subtle smoky notes.

    Palate
    The attack is direct and full of energy. The palate offers a beautiful depth as well as a rich texture, revealing flavours of crisp citrus fruits such as ripe lemon and grapefruit, enhanced by delicate buttery touches.

    Food and wine pairings

    Ideal with fish prepared in butter such as sole meunière or roasted poultry in sauce. This white wine also pairs wonderfully with shellfish such as lobster or langoustines, as well as soft cheeses like Brie de Meaux or Reblochon.

    Serving and cellaring

    Endowed with beautiful potential, this Puligny-Montrachet Village "Les Folatières" 2023 can be enjoyed in its youth but will continue to develop favourably in the cellar to be tasted until around 2033.

    The mineral expression of a great Burgundy wine by the Pierre Girardin estate

    The estate

    Founded in 2017 by Pierre-Vincent Girardin, its current owner and winemaker, the Pierre Girardin estate quickly established itself in Burgundy. Located in Meursault, France, the property draws on a 4.5-hectare vineyard spread across prestigious terroirs. Representing the thirteenth generation of his family, the young winemaker stands out through an approach combining Burgundian traditions with contemporary methods. The estate favours organic viticulture guided by the lunar calendar and minimalist interventions in the cellar, seeking to express the purity of each plot.

    The vineyard

    The plot from which this wine originates is located within the famous Puligny-Montrachet appellation. Positioned mid-slope and benefiting from an ideal south-easterly exposure, the vines enjoy optimal sunshine without excessive heat. The terroir is composed of limestone soils mixed with ochre earth and small stones, resting on a limestone bedrock. The vineyard is cultivated according to the principles of organic and biodynamic farming, with harvests carried out by hand in small crates to preserve the integrity of the bunches.

    The vintage

    The 2023 season benefited from very favourable weather conditions, with adequate rainfall throughout the growing cycle. The absence of disease pressure allowed perfectly healthy fruit to be harvested. The harvest, which began in early September, yielded grapes combining beautiful maturity with refreshing acidity.

    Winemaking and ageing

    The creation of the Puligny-Montrachet Village "Les Folatières" 2023 is based on a philosophy of minimal intervention. After a slow whole-bunch pressing that can last up to three hours, the juice undergoes a light settling. Fermentation begins spontaneously thanks to indigenous yeasts. Ageing takes place in bespoke 456-litre oak barrels. This specific format helps limit the oaky impact and oxidation, thereby preserving all the freshness of the wine within a cellar kept at a low temperature.
