    Tasting

    Colour
    A brilliant ruby colour, this wine appears clear and bright, typical of the youthfulness of the grape variety.

    Nose
    The aromatic bouquet opens with intense notes of red and black fruits, such as cherry and plum. It then develops spicy, mineral and herbaceous nuances evoking menthol, tobacco and undergrowth, all underscored by a delicate touch of melted vanilla.

    Palate
    The attack, pleasantly firm and carried by beautiful natural acidity, gives way to a harmonious mid-palate with fine, well-integrated tannins. The fruity flavours from the nose reappear here, complemented by mineral accents, leading to a persistent, clean and refreshing finish.

    Food and Wine Pairing

    This red wine pairs wonderfully with herb-roasted chicken, roast beef or grilled, peppered beef. It also goes very well with game dishes such as duck confit or braised venison, as well as mild, matured cheeses, particularly those from the region.

    Service and Storage

    For optimal tasting, it is recommended to serve this wine at a temperature of around 14°C. Decanting for thirty to sixty minutes before serving can help release the aromas. This wine can be enjoyed now, but it will evolve favourably and can be kept until around 2030.

    The Authentic Expression of Burgundian Terroir by Remoissenet Père et Fils

    The Estate

    Founded in 1877 and housed in a historic fifteenth-century building in the heart of Beaune, the Remoissenet Père et Fils house is an emblematic figure of Burgundy. Acquired in 2005 by Edward and Howard Milstein, alongside Bernard Repolt and Halpern Enterprises, the estate has undergone a genuine revival. Under the leadership of Pierre-Antoine Rovani, the estate now combines a high-quality merchant business with its own production. Firmly committed to biodynamic viticulture, the house favours minimal-intervention winemaking to allow the full expression of each terroir's identity.

    The Vineyard

    The grapes come from several carefully selected plots within the Gevrey-Chambertin appellation, located in the northern part of the Côte de Nuits. Sitting at an altitude of between 250 and 300 metres, the vines benefit from an ideal south and south-east exposure. Aged between thirty and fifty years, they thrive on a complex geological mosaic made up of limestone-rich alluvial soils, marls, as well as sands and gravels. The vineyard is farmed according to the principles of biodynamic agriculture.

    The Vintage

    The year 2023 was marked by contrasting weather conditions, with temperature variations and fluctuating rainfall throughout the growing cycle. Despite these meteorological challenges, the season produced berries with a fine balance between fruit ripeness and freshness.

    Winemaking and Aging

    The grapes are harvested by hand at optimal ripeness, with rigorous sorting of the bunches. The whole berries are handled delicately to preserve their integrity. Fermentation takes place in open oak vats, using exclusively indigenous yeasts. The wine is then aged in 350-litre French oak barrels, with around 30% new oak. To preserve its full authenticity, the wine is bottled without any fining or filtration.
