Tasting
Appearance
The colour is intense, tending towards a deep ruby, almost garnet, a depth of hue that comes from the long maceration applied to this premier cru.
Nose
The nose opens with aromas of ripe black and red fruit, led by cherry and blackcurrant, together with hints of violet and spice. Ageing in oak barrels, with a proportion of new wood, adds toastier nuances of vanilla and light roast that envelop the fruit.
Palate
The palate is full-bodied and well structured, driven by present yet refined tannins inherited from the terroir of Les Rugiens Bas. The long finish hints at a mineral sensation, echoing the iron-rich soils of the climat.
Food and wine pairing
This Pommard 1er Cru "Les Rugiens" is an ideal match for roast or braised red meats, beef daubes and game stews such as venison or wild boar civet. It also pairs beautifully with characterful poultry such as guinea fowl or roast duck, as well as with aged pressed cheeses such as Comté, Beaufort or Cantal.

The estate
Domaine du Pavillon is the wine estate of the House of Albert Bichot, a Burgundy-based négociant house founded in 1831 and now led by Albéric Bichot. Located in Pommard, in the Côte de Beaune, within the Clos des Ursulines, the estate covers approximately 19.5 hectares and combines a monopole in Pommard village, premiers crus including Les Rugiens, and two Corton grands crus. The entire vineyard is farmed organically, with certified wines since the 2018 vintage.
The vineyard
The cuvée comes from a 0.32-hectare micro-plot on the Les Rugiens Bas climat, one of the most renowned terroirs of the Pommard appellation, with a south-easterly exposure. The soils are clay-limestone and rich in iron, a component that gives the wines of this climat their characteristic power. The vines, aged 35 to 40 years, are farmed according to organic principles and harvested by hand.
Winemaking and ageing
To craft the Pommard 1er Cru "Les Rugiens" 2022, the hand-harvested grapes are fermented in truncated-cone wooden vats with temperature control, over a maceration period of 18 to 21 days. The wine is then aged for 14 to 16 months in oak barrels, 25 to 35% of which are new.
