Tasting
Nose
The nose is expressive, releasing delicate aromas of white flowers and citrus blossom. It is enriched with notes of stone fruits, reminiscent of nectarine, subtly underlined by honeyed touches of acacia blossom and a mineral framework.
Palate
On the palate, this wine offers a beautiful roundness and a smooth texture, perfectly balanced by refreshing acidity. Its mineral structure gives it lovely tension and great precision.
Food and wine pairing
This white wine pairs wonderfully with delicate seafood dishes, such as sea bream with sesame accompanied by a bergamot ceviche, or pollack served with artichokes and potatoes. It will also enhance rich cheeses such as Brillat-Savarin, as well as shellfish or dishes based on fresh vegetables.

The estate
While the Picard family's winegrowing history began in 1951 in Burgundy, it was at the end of the 2000s that Francine Picard, the current owner and director, created the Au Pied du Mont Chauve estate. Located on the Côte de Beaune, this property spans 35 hectares of vines distributed across three renowned villages. Cultivated according to biodynamic principles with certification obtained in 2019, the estate stands out for its environmentally respectful approach and minimal-intervention winemaking, thus revealing the authenticity of its Burgundian terroirs.
The vineyard
The vineyard from which this Saint-Aubin originates rests on limestone soils dating from the Jurassic and Quaternary periods. The "Le Charmois" plot benefits from an eastern exposure and an altitude varying between 250 and 350 metres. This steep slope, combined with a more northerly exposure, gives the vines, averaging around fifty years old, a late ripening cycle. The estate cultivates more than 5 hectares of Chardonnay there, applying rigorous biodynamic methods, encouraging natural grass cover and limiting yields to ensure soil health.
The vintage
The 2024 vintage was marked by particularly challenging weather conditions, with excessive rainfall, frost episodes and localised hail. This high humidity led to constant fungal pressure throughout the growing cycle. Flowering, which occurred in mid-June under cool temperatures, caused coulure and millerandage, considerably reducing yields. Fortunately, the return of sunny weather at the end of August and the beginning of September allowed the remaining grapes to reach an adequate level of ripeness.
