Colour
This wine displays a brilliant, pale yellow hue with slight green highlights and the great clarity typical of a young wine.
Nose
The nose opens with crisp notes of lemon and green apple, along with touches of white fruit, set against a mineral backdrop reminiscent of flint.
Palate
The attack is lively, driven by a pronounced acidity that gives the wine tension while retaining a slight roundness. The structure, refined by its Premier Cru status, extends into a saline, persistent finish, where the lemony and mineral notes return.
Food and Wine Pairings
This Chablis 1er Cru from Domaine Billaud-Simon pairs beautifully with oysters and other shellfish, as well as white-fleshed fish such as sea bass, served with crisp vegetables. A Chablis 1er Cru from Domaine Billaud-Simon Faithful to the Minerality of its Kimmeridgian Terroir
The Estate
Founded in 1815 in Chablis, in Burgundy, Domaine Billaud-Simon today farms approximately 17 hectares of vines spread across the finest terroirs of the appellation. Owned by the Faiveley family since 2014, the estate is technically directed by Olivier Bailly, who ensures that a winemaking style focused on precision and minerality is preserved. Engaged in a conversion to organic farming since 2022, Billaud-Simon remains a historic benchmark of the Chablis vineyard.
The Vineyard
The vineyard from which this Chablis 1er Cru originates is planted on the characteristic Kimmeridgian marl and limestone soils, rich in marine fossils. The vines, around fifty years old, benefit from the prime exposure specific to the climats classified as Premier Cru within the appellation, and are managed according to the principles of organic farming.
The Vintage
The 2023 vintage benefited from favourable weather conditions, yielding healthy grapes with a good balance between acidity and ripeness.
Winemaking and Ageing
For the production of this Chablis 1er Cru 2023, both fermentation and ageing take place entirely in temperature-controlled stainless steel tanks, without the use of oak, in order to preserve the freshness of the fruit and the expression of the terroir.
