Tasting

Appearance
This wine typically displays a pale straw-yellow hue, standing out for its remarkable purity and luminous brilliance.

Nose
The bouquet is generally deep and complex. It releases intense aromas of white flowers and white-fleshed fruits, harmoniously underscored by citrus notes and subtle spicy nuances.

Palate
The palate classically offers a superb balance between a full-bodied texture and vibrant liveliness. This measured opulence extends into a lingering finish, elevated by a delicate salinity and great mineral freshness.

Food and wine pairings

This cuvée pairs beautifully with fish in sauce, seafood, delicate poultry in cream sauce, as well as aged goat cheeses.

Serving and cellaring

For an optimal tasting experience, this wine should be served at a temperature between 10 and 12 °C. This white wine has excellent aging potential and can be enjoyed until around 2039.

The elegance and minerality of a great white Burgundy

The estate

Heir to a long family tradition in Burgundy, Bruno Colin legally founded his own estate in 2003, after having worked for ten years alongside his father. Located at the heart of Chassagne-Montrachet, the property extends over approximately 8.75 hectares spread across prestigious appellations of the Côte de Beaune. Today, owner-manager Bruno Colin distinguishes himself through his pursuit of purity and tension, crafting mineral, refined white wines that break with the more opulent style of the previous generation.

The vineyard

Sourced from a micro-parcel of 0.42 hectares, this cuvée comes from the Climat "Les Chaumées", situated on the northern heights of Chassagne-Montrachet, on the edge of Saint-Aubin. This steep terroir rests on very stony clay-limestone soils. The vines, planted in three phases (1956, 1988 and 2003), benefit from environmentally friendly practices, including regular ploughing, mechanical soil work without any herbicides and entirely manual harvesting.

Winemaking and aging

The grapes undergo rigorous sorting before delicate pressing and precise settling. Fermentation takes place in oak barrels. Aging then continues on fine lees for twelve months in 350-litre barrels, with a measured proportion of 15 to 20% new wood. Finally, the wine rests in vats for four to six months to harmonise the whole before bottling.
