Tasting Notes
Colour
This wine reveals a beautiful ruby red colour, adorned with garnet highlights typical of its grape variety, hinting at a slight tawny evolution around the rim of the glass.
Nose
The bouquet displays great complexity. It combines primary aromas of red and black berries, tart cherry and faded rose with spicy notes. Over time, more evolved touches of chocolate, undergrowth and truffle emerge.
Palate
Rich and powerful, the palate offers a harmonious and vigorous texture. The excellent acidity balances perfectly with ripe, structuring tannins. This multi-faceted wine lingers on a persistent finish, marked by spicy and balsamic nuances.
Food and Wine Pairing
This cuvée pairs wonderfully with roasted or grilled red meats, as well as rich sauce-based dishes. It will also enhance game such as venison or wild boar, and will ideally accompany aged hard cheeses or regional specialities such as beef braised in red wine.
Serving and Cellaring
This 2022 Barolo is built for very long cellaring, capable of evolving favourably in the bottle for over fifteen years. For tasting in its youth, decanting is recommended to soften its structure. It is best enjoyed at a temperature of between 16 and 18°C.
The elegance and power of a Piedmont wine by Ceretto
The Estate
Officially founded in 1937, the Ceretto estate is a true institution located in Alba, at the heart of Piedmont. Now run by the Ceretto family, with Alessandro Ceretto overseeing technical direction, the estate spans 160 hectares of vineyards. A pioneer in showcasing single crus since the 1960s, this iconic name stands out for its strong environmental commitment, having obtained organic certification in 2015 and applying biodynamic principles. The estate thus brilliantly combines the scope of a great house with the demands of terroir-driven winemaking.
The Vineyard
The vines dedicated to this classic Barolo cover approximately 4 hectares spread across several prestigious communes within the appellation: Barolo, Castiglione Falletto, La Morra, Monforte d'Alba and Serralunga d'Alba. The plots, often located on steep south to south-east facing slopes, display great geological diversity, combining marl, clay, limestone and friable soils. The entire vineyard is farmed according to biodynamic principles and is organically certified, ensuring complete respect for the environment and biodiversity.
Winemaking and Ageing
The grapes are hand-harvested in early October, then destemmed and carefully sorted. Fermentation is triggered by indigenous yeasts in steel tanks, with a submerged cap maceration lasting about two weeks, without temperature control. A post-fermentation maceration of 10 to 15 days allows the structure and aromas to be extracted. This Italian wine is aged first for 12 months in 300-litre oak barrels, then for 12 months in 25-hectolitre oak casks. After blending, the wine rests for a further 18 months in steel tanks before bottling.
