An authentic Savigny-lès-Beaune from Burgundy’s Côte de Beaune
The estate
Founded in 1720 in Beaune by cooper Edme Champy, the Champy house is the oldest négociant in Burgundy. Since October 2016, it has been part of the AdVini group and farms 21 hectares on the Côte de Beaune, half of which is organically certified and the other half holds the Haute Valeur Environnementale certification. Its collaboration with Louis Pasteur in the 1860s on the pasteurization of wines marked the beginnings of scientific oenology. Champy was awarded the “Entreprise du Patrimoine Vivant” label in 2021 and combines historic heritage with an ecological commitment.
The vineyard
This Savigny-lès-Beaune comes from plots in the lieux-dits Les Bas Liards, Planchots, Fourneaux, and Pimentiers. The vineyard rests on clay-limestone soils that are siliceous or stony, light, and low in fertility. The vines benefit from varied exposures from south to northeast at elevations between 220 and 360 meters. The grapes come exclusively from the estate’s plots, farmed according to organic principles.
The vintage
After a winter that was milder and drier than average, the first green tips appeared in early April. Weather conditions in the first half of September contributed to the generosity and quality of the 2022 harvest.
Winemaking and aging
This Savigny-lès-Beaune Village 2022 is traditionally vinified with indigenous yeasts. It is aged for 12 months in oak barrels, 20% of which are new oak.
