Characteristics and Tasting Notes for Château Beychevelle 2000
Tasting Notes
Appearance
This wine reveals a very deep colour. Initially ruby to purple in hue, it evolves over time towards a deep garnet, adorned with subtle tawny reflections characteristic of its maturity.
Nose
Of great complexity, the aromatic bouquet reveals a harmonious blend of blackcurrant, blackberry and blueberry, intertwined with notes of dried fruit. Subtle touches of tobacco, liquorice and cedar are added, along with earthy nuances and hints of damp undergrowth.
Palate
The palate offers a strong tannic structure while retaining great finesse. This dense and fleshy wine, with a medium to full body, presents fine tannins and beautiful acidity. The long, lingering finish reveals aromas of spice, minerals and blond tobacco over a backdrop of black fruit.
Food and Wine Pairing
This great wine pairs wonderfully with grilled or roasted red meats, such as a fine cut of beef or a rack of lamb, as well as with noble poultry accompanied by mushrooms. It also enhances feathered game dishes, Italian dishes in sauce, and aged hard cheeses such as old gouda or Comté.
Serving and Ageing
Château Beychevelle 2000 is currently at its peak maturity and offers an optimal tasting experience. Stored under good conditions, this vintage can be enjoyed until around 2025, or even beyond for the best-stored bottles.
A Great Saint-Julien Wine Combining Power and Elegance
The Estate
Built in 1565, Château Beychevelle is an iconic estate in the Bordeaux region. Nicknamed the "Versailles of the Médoc", this estate spans 250 hectares, including around 90 hectares of vines. Today, it belongs to the Grands Millésimes de France company, owned in equal shares by the Castel and Suntory groups, under the direction of Philippe Blanc. Drawing on its maritime history and majestic architecture, the estate has made its mark around the world, producing wines that combine classicism, elegance and respect for the environment.
The Vineyard
Located at the heart of the Saint-Julien appellation, the vineyard is planted on deep Garonne gravel ridges. The immediate proximity of the Gironde estuary plays an essential thermal regulating role, protecting the vines from climatic extremes. For this vintage, the production area covered 73 hectares. The vines, planted at high density, benefit from environmentally friendly cultivation practices, encouraging deep rooting and rich biodiversity thanks to the surrounding meadows and forests.
The Vintage
The year began with a cold winter, followed by above-seasonal-average temperatures from March onwards. The cool, wet spring slowed the vine's development. Flowering began on 26 May for the Merlot and 29 May for the Cabernet Sauvignon, while véraison became widespread around 27 July. The hot, dry months of August and September allowed for even ripening. The harvest took place from 22 September to 10 October under ideal weather conditions, with only four hours of rain recorded over the entire period.
Winemaking and Ageing
Following hand-harvesting and rigorous sorting, vinification was carried out plot by plot to respect the identity of each lot. The yield reached 53.1 hectolitres per hectare. Ageing took place over eighteen months in French oak barrels, of which around half were new. This meticulous process concluded with traditional fining using egg whites and candle rackings before bottling.
Grape Varieties
This wine is made from a blend of 49% Cabernet Sauvignon, 38% Merlot, 7% Cabernet Franc and 6% Petit Verdot.
