Tasting Notes
Colour
The colour reveals a deep red hue.
Nose
Generous and refined, the bouquet reveals aromas of ripe red and black fruits such as blackberry, raspberry and pomegranate. The whole is delicately underscored by notes of violet and a subtle touch of garrigue.
Palate
The palate offers a texture that is both silky and structured, carried by a lovely fruit density. A mineral thread brings great freshness and lengthens the finish. This wine stands out for its remarkably fine tannins, offering a profile that is deep, airy and harmonious.
Food and Wine Pairing
This red wine pairs beautifully with grilled or roasted meats, such as rib of beef, duck breast or leg of lamb. It also goes wonderfully with dishes featuring smoky flavours or Mediterranean herbs.
Serving and Cellaring
For optimal enjoyment, it is recommended to serve Les Combettes 2024 at a temperature of around 16°C, taking care to open or decant it one to two hours beforehand. This wine can be enjoyed young, but it will continue to develop in the cellar and can be savoured until around 2031.

The Estate
Founded in 2006 in Cazelles, Domaine Anne Gros & Jean-Paul Tollot is the result of the meeting of two experienced Burgundian winemakers. Located in the hills of the Minervois, in the Languedoc region of France, the estate quickly established itself as an essential reference. Still run today by Anne Gros and Jean-Paul Tollot, the estate stands out for its unique philosophy: transposing the rigour and delicacy of Burgundy onto Mediterranean terroirs. The domaine thus champions purity of fruit and elegance, cultivating a mosaic of plots with an environmentally respectful approach.
The Vineyard
The plot dedicated to this cuvée covers one hectare within the IGP Pays de l'Hérault Côtes du Brian appellation. Planted in 2012, these young vines flourish on a terroir composed of fine clay-limestone and light gravel. Located at altitude, near the Massif Central, this vineyard benefits from a climate cooled by regular winds and cool nights. This unusual geographical setting, combined with sustainable viticulture, helps preserve a lovely natural acidity despite the region's generous sunshine.
The Vintage
The year 2024 was characterised by a typically Mediterranean sunny climate. Weather conditions allowed the berries to reach excellent phenolic ripeness, while retaining the necessary freshness thanks to the influence of altitude and the water reserves held in the clay-limestone soils.
Winemaking and Ageing
The grapes for the Les Combettes 2024 cuvée are harvested entirely by hand to preserve the integrity of the bunches. In the cellar, the approach draws on Burgundian methods, with total destemming to enhance the finesse of the tannins. The wine is then aged entirely in oak barrels, refining its structure while preserving the brightness of its fruit.
