In its youth, this French red wine is best enjoyed with charcuterie and cheese boards, a tournedos Rossini or delicious vol-au-vent. After a few years of ageing, it will beautifully complement grilled red meats, game, dishes in red wine sauce or characterful cheeses such as Époisses.

The estate
Founded in 1999 by Jean-Charles Boisset, Domaine de la Vougeraie brings together a family winegrowing heritage patiently built up since the 1960s. Located in Premeaux-Prissey, in the heart of Burgundy, this estate of around thirty-seven hectares spans the prestigious terroirs of the Côte d'Or. Now led by Sylvie Poillot on behalf of the owning family, the estate is distinguished by its deep commitment to biodynamics and respect for lunar cycles. This strong environmental philosophy gives rise to authentic wines that precisely reflect the purity of their terroirs.
The vineyard
The vines behind this Savigny-Les-Beaune thrive on hillsides at altitudes ranging between 250 and 400 metres. This distinctive terroir stands out for its deep, sandy soils, particularly rich in iron, with a low proportion of clay and calcareous silt. The vineyard is cultivated according to the rigorous principles of biodynamic farming, encouraging microbial life in the soils, with some ploughing carried out using horses to preserve the natural ecosystem.
The vintage
The year 2022 began with a mild winter followed by a spring offering ideal flowering conditions. At the end of June, a significant storm brought beneficial water reserves ahead of a hot, dry summer. These summer temperatures slightly slowed ripening, helping preserve a lovely natural acidity. In mid-August, welcome rains revived the vegetative cycle, followed by dry, windy weeks ensuring perfect sanitary conditions right through to harvest.
Winemaking and ageing
The grapes used to produce the Savigny-Les-Beaune 1er cru "Les Marconnets" 2022 are hand-harvested in small crates. Vinification includes a significant proportion of whole bunches. After a cold pre-fermentation maceration, fermentation begins through the action of indigenous yeasts in wooden vats, punctuated by regular punching down and pumping over. The wine is then pressed vertically and transferred by gravity. Ageing takes place over a period of twelve to eighteen months in oak barrels, only 20% of which are new, before bottling in accordance with the lunar calendar.
