Tasting
Colour
A vivid ruby hue deepening to garnet, enhanced by violet highlights, unfolds in the glass.
Nose
The nose opens gradually onto floral notes of rose alongside spicy touches of white pepper and tobacco. With aeration, it reveals aromas of small dark fruits such as blackcurrant, blackberry and plum, rounded out by subtle toasted, meaty and earthy nuances.
Palate
The attack is elegant and refined, underpinned by silky tannins. The palate offers a lovely fruit concentration centred on blackcurrant and cherry, balanced by a refreshing tension. The finish is long and persistent, marked by a characteristic minerality.
Food and wine pairing
This red wine pairs perfectly with feathered game such as partridge or wild duck, as well as with wild boar or venison. It also goes wonderfully with beef dishes, herb-roasted lamb, or umami-rich dishes featuring mushrooms, porcini or truffles.
Service and storage
For optimal enjoyment, this wine is best served at a temperature between 13 and 14°C. It can be enjoyed from 2025 and will continue to evolve favourably until around 2041.

The depth and elegance of a Nuits-Saint-Georges wine
The estate
Located in France, at the heart of the Burgundy region, Domaine des Perdrix underwent a true renaissance following its acquisition in 1996 by the Devillard family. Spanning fifteen hectares of vines, the estate is now run by Amaury and Aurore Devillard, who represent the new generation. The domaine has built a solid international reputation by producing wines that precisely express the richness of their terroirs. It stands out in particular for its near-monopoly status over the renowned "Aux Perdrix" climat.
The vineyard
This wine comes from the "Aux Perdrix" climat, a three-and-a-half-hectare vineyard located within the Nuits-Saint-Georges appellation, near Premeaux-Prissey. South-southeast facing, the vines, roughly thirty-five years old, thrive on clay-limestone soils where clay predominates. The domaine, which owns 99% of this climat in near-monopoly, practices sustainable viticulture, encouraging natural biodiversity and limiting yields to ensure optimal grape concentration.
The vintage
2023 offered particularly favourable weather conditions. Adequate humidity during flowering and fruit set, followed by sufficient sunshine during the ripening phase, allowed the grapes to reach optimal phenolic maturity. The absence of major disease pressure contributed to a healthy, balanced harvest.
Winemaking and aging
The grapes are hand-harvested exclusively, followed by rigorous sorting. The berries are 70% destemmed before undergoing a four-to-six-day cold pre-fermentation maceration. Fermentation begins naturally through indigenous yeasts, accompanied by regular punching down of the cap. Aging takes place over approximately eighteen months in 228-litre French oak barrels (20% new oak), followed by a final refining period of two to four months in neutral tanks.
