Tasting

Colour
The colour reveals a dark red hue, particularly dense and opaque. It is adorned with deep purple, almost blackish reflections, testifying to a great concentration.

Nose
The nose proves powerful and highly complex. It opens first with hints of vanilla and dark chocolate, before releasing, upon aeration, intense aromas of black fruits such as blackberry, blackcurrant and blueberry. Nuances of eucalyptus, liquorice, undergrowth and noble leather come to enrich this constantly evolving bouquet.

Palate
The attack on the palate is velvety and marked by a lovely mineral sapidity. The tannic structure proves both dense, ripe and remarkably fine. The whole is supported by a lovely natural acidity that brings a great deal of freshness, stretching towards a finish of exceptional length.

Food and wine pairing

This wine enhances refined red meats such as tournedos or lamb in pastry, as well as noble game in sauce. It also pairs wonderfully with sweet-and-savoury dishes or a cheese board with character, such as a blue cheese or an aged semi-hard cheese.

Service and storage

To fully appreciate La Petite Sibérie 2022, it is recommended to serve it at a temperature between 14 and 17°C, after decanting for at least one hour. This wine, crafted for the long haul, can be enjoyed now after extended aeration, but will continue to evolve favourably and can be drunk until around 2052.

A Roussillon wine of exceptional concentration

The estate

Founded in 1998 by Hervé and Claudine Bizeul, who remain its current owners, the Domaine du Clos des Fées is an essential reference in Roussillon. Born of a bold vision and relentless hard work, this estate now spans some forty hectares of vines spread across a mosaic of complex terroirs. Driven by a constant quest for excellence and a respectful approach to biodiversity, the estate produces distinctive wines that challenge the region's conventions, combining Mediterranean power with unexpected freshness.

The vineyard

Coming from a single plot of just over two hectares, this exceptional cuvée belongs to the great tradition of Côtes du Roussillon Villages. The old vines, trained in gobelet, thrive on the south-facing slope of a clay-limestone relief rich in iron-bearing schist. This singular terroir is swept more than two hundred days a year by an icy tramontane wind, creating a natural water stress that limits yields and encourages a rare aromatic concentration while preserving the berries' acidity.

The vintage

The year 2022 helped shape a wine with a profile of restrained power. The extreme climatic conditions, marked by the ever-present icy north-westerly wind, slowed down the growing cycle and cooled the summer nights. This dynamic favoured a slow, perfect phenolic ripening, ensuring the grapes an unprecedented freshness for fruit of Mediterranean influence.

Winemaking and aging

The grapes destined for La Petite Sibérie 2022 are hand-harvested, rigorously sorted, then transported under controlled temperature to preserve their integrity. In the cellar, maceration lasts twenty days with gentle daily punching down for measured extraction. The wine is then transferred directly into new barrels for an eighteen-month aging period on the lees, punctuated by regular topping up. Bottling is carried out without any filtration.
